Beet Salad with Goat Cheese

Ham Tetrazzini

Found this recipe while looking for something to do with some leftover ham. Used this recipe as a starting point and embellished it. Added garlic and mushrooms to the onion. Also added some peas. I had cheddar on hand, but decided on fontina for two reasons, I needed to use it and thought it would go well. I realize it’s unfair to rate a recipe that I altered so I gave it 4 stars. I predict without the changes, I would have given it fewer stars.

Balsamic Mushrooms

This is a great accompaniment for grilled steaks. I've made a mushroom side for steak with dry sherry for a long, long time. This combination of garlic and balsamic will replace it for grilled beef. BTW, I cooked it longer than the recipe states reducing the liquid.

Chicken Enchiladas With Mole Sauce

I selected this recipe to make because I had leftover mole (Rick Bayless version) to use and poblanos and Anaheim peppers in the garden. So, I only made the chicken filling for enchiladas which has a very good flavor. The amount of meat to broth seems off. I had to reduce the liquid for a long time. I'd add more meat - say 2#, or reduce the chicken broth by 1 cup next time.

Blue Cheese Crusted Filet Mignon with Port Wine Sauce

Nice combination. I also made the dinner for two and made the sauce recipe for four. Used olive oil on the steaks instead of vegetable oil. 15 minutes baking time is a little too long for medium rare.

Sausage Egg Casserole

Made it for a family reunion breakfast. It went over well with everyone and was all gone. I thought it could use a little more heat, maybe a dash of red pepper flakes would do it. Not much different than many other make ahead egg dishes, but a good one.

Stuffed Eggplant with Shrimp and Basil

Made as written with a few changes in the method. Added the shrimp and the basil later so not to cook too long. We liked it but thought it could use a kick... perhaps more garlic or a dash of red pepper flakes. Nice way to use eggplant!

Chrissy's Sweet 'n' Sour Tomato Salad

Made the recipe as written with some of our fresh heirloom tomatoes and one of the side choices for a cookout. I usually make tomato salad with a lot of garlic and this was a nice change. Everyone raved about them.

Linguine Pasta with Shrimp and Tomatoes

Great recipe for using garden tomatoes. We used roma tomatoes that were peeled and seeded. Added some red pepper flakes to the sauce and also used the AR Cajun spice mix for the shrimp. Did not mix the cooked shrimp into the sauce to avoid over cooking and served them over the pasta with sauce. Definitely a keeper!

Nice summer soup recipe. I added a clove of garlic with the onion and used only one orange for zest and juice. Also added about 1/4 cup of cream and then garnished with the sour cream making a design and a parsley garnish.
