Mulligatawny Soup I

Yum! A sweet and spicy curry soup with nice texture and appearance which I'll certainly be making again, though with a couple of minor alterations: **Double both the curry (I used mild) and the apple**. Also note that those who don't like curry will absolutely despise this recipe, so be forewarned that there's no point in sharing any with such hopelessly lost souls- take this into consideration when planning your portions. Luckily this soup warms up well though as I've been single-handedly enjoying all 6 of my servings for the past week!

Moroccan Lentil Salad

BLAND, though visually and texturally appealing. If you're still determined to make this, then you'll want to DOUBLE the lentils and dress it up with some additional flavor (try balsamic vinegar, pepper, garlic powder, cumin and feta cheese) as it really doesn't taste like anything as-is. In fact, you may as well skip the olive oil and lime juice in favor of a tasty dressing instead. Meh.

Strawberry Soup a la Kiev

Pretty good, but I really didn't notice much improvement from the simmering. Next time I'll keep a portion uncooked for comparison, as the simmering seemed to kill the wine and flatten the flavor a bit. I also recommend adding another cup of strawberries and chopping a couple cups of them so there's some texture, rather than a straight puree. Might add a bit more wine, too.

Rye Beer Bread

The rye flavor was a bit lacking, so next time I'll try increasing the rye/bread flour ratio (maybe to 3.5 cups rye, 1.5 cups bread) and see what happens. I'll also try using some almost undrinkably dark, stout wheat beer that I homebrewed a few months ago, as I think this'll be an excellent utilization. In other words this bread wasn't perfect, but I'll certainly be trying again. I think the extra rye and some über-flavorful beer ought to make this into a special, truly 5-star loaf.

Russian Mushroom and Potato Soup

Not bad, but not extraordinary either. May try again with an extra leek and more mushrooms. Also, I passed on the salt addition as the broth already contributed plenty.

Lentil Stuffed Tomatoes

I topped this with feta and it made a very refreshing, 'bright' tasting summer entrée. I will definitely make this again, though next time I'll add a small amount of lamb and maybe some pine nuts.

Hungarian Mushroom Soup

This is one of the best mushroom soups EVER!!! Very quick and easy to make (I was able to cut the time down a bit from the recipe's instructions) and quite tasty. Would be exquisite with some home baked bread!

Stuffed Green Peppers I

Double the rice, onion and worcestershire sauce. Add garlic, black pepper, basil and oregano. Halve the condensed tomato soup; mix part into stuffing mixture, pour remainder on top. I might also recommend reducing the total amount of stuffing or doing an extra 2-3 peppers (especially if adding extra rice), as peppers were, in my opinion, overstuffed (even with stock recipe).

Carrot Souffle

I could have done something wrong; I didn't much like the result... My carrots weren't very sweet though, so perhaps I should have added some sugar? Tasted very 'vegetariany', so if that's what you're going for, maybe you'll love it.

Curried Carrot Soup

Try serving just luke-warm with a scoop of vanilla ice cream for a delicious summer dessert! I used chicken rather than vegetable broth and it turned out rather good, but I'll halve the amount of broth next time (I think it overpowered the carrot flavor). Would also recommend retaining some carrot chunks for a more interesting texture.
