Herbed Scalloped Potatoes and Onions

I was skeptical but I had heard about using mayo and stock instead of milk and this worked great. I prefer a little more salt and pepper but that is my taste and I can't find a fault with this alternative to the cream/milk versions we're all used to having. My only warning is be very prudent about the mayo and butter usage. It doesn't take a lot extra to make the result a little fatty looking.

Grits Casserole

You can't go wrong with this recipe! I've eaten grits for 50 years and my wife hates them. But she will eat these cold out of the pan on the stove! Drain your sausage well and don't attempt to use any extra cheese for the best results. We love trying it with different sausages and smokehouse breakfast sausage is our favorite. It also halves wonderfully for 3 - 4 people. I always have a 1/2 lb of bulk sausage and shredded cheese in the fridge for when we want to make a 1/2 recipe for Sunday brunch!

Classic Macaroni Salad

One of the staples in the summer months in my house! It's a great salad recipe. I like mine less sweet but it is certainly easy enough to adjust.

Jalapeno Popper Cups

This is a great recipe for people who not only have just a few peppers but also for those people who don't like too much heat. The crunch of the phyllo adds wonderful texture. This isn't my favorite popper recipe but it is a great one regardless!

Easy Pilaf

I've always struggled making good rice on the stove. This is about as simple as it gets and works every time. Be sure to let the rice rest 5 to 10 minutes before fluffing, it helps. I like to add a couple cloves of minced garlic at the end of the onion cooking also.
