i would recommend you to use BelGioioso's mascerpone cheese because the other brand i used for my second one (i made two), i think it was by Vermont Butter & Cheese Co., tasted really crappy. I did not use rum but the taste is still heavenly. Also i did not whisk together the egg custard and the whipped cream because then i would really feel the custard and the cream blend together in my mouth (I mixed them up together for my SECOND one and it tasted not as good as i expected, i couldnt differentiate between the custard and the cream at all). I also put a little bit off sugar into the coffee to enhance the taste). Also for the whipped cream, i would say to add also 2/3 cup of whole milk into it along with heavy cream and vanilla extract (it tastes really good when you assemble the whole thing together.
