Ukrainian Red Borscht Soup

Had borscht once and I loved it... but then had it at a polish restaurant and hated it! It made me realize there are MANY ways to make borscht and it's very possible your going to like one and not the other. I loved this one because it had pork in it and the earthy beet flavor was not overpowering. The polish borscht i had was very overpowering with beet flavor and i realized that's what i dont' like-- and also why many people probably don't like Borscht. This one, however, was great! I used 2 large hot Italian sausage links out of the casing. Next time I will put 1 more link in there. Not too greasy with the pork... After i dumped the pork in the water, some oil accumulated at the top and i just skimmed it out. For the cabbage, i got pre-shredded coleslaw mix. Other than that, followed the recipe exactly swapping out dill for parsley. It was great! I did try one of the other recommendations of adding a bit of balsamic vinegar at the end - and that was a nice touch. I may also try to add a chicken bullion cube to the water just to see what happens. Otherwise great recipe and I recommend it!

Easy Garlic Escargots

Delicious. I didn't have any mushrooms, so I made the recipe without. Next time I will buy the mushrooms to stuff the escargot in. I upped the garlic to 3-4 cloves instead of just 1. I also decreased the butter. Next time I think i will add some olive oil during baking. I love to dunk the bread in the sauce.. but it was quite thick. So if I can just get a little more runny consistancy (maybe decrease the flour & add a little evoo) it will be perfect for bread dipping at the end. Yummo.

Italian Potato Salad

Great recipe. I didn't measure-- just eyeballed the ingridients but I can tell you right off the bat that there was too much vinegar in the original recipe. I decreased that and also added 2 extra cloves of garlic. Also used red potatoes and kept skin on. Delicious. Great alternative for mayo.

Basil Pork Chops

Really great taste! One of the best pork chop recipes i've made. Used thick boneless chops which are normally dry! I browned them in a pan and then let them cook for another 10 mins in the oven at 375. After taking the pork out of the pan, i threw in some onions and they carmelized wonderfuly in the pan juices! Definitely recommend that. Also used olive oil in pan & rub instead of vegetable oil.

Greek Lentil Soup (Fakes)

Great lentil soup. It's very similar to how I always made lentil soup, which is what I found appealing. The key is the vinegar at the end. I thought it was a little weird at first but it actually tasted really good. Also, I'm italian so I put grated romano or pamasean cheese on everything... that really enhances the lentils even more. Enjoy.

Black Bean Hummus

Love the black bean hummus! Great even without some of the ingredients listed on here. What I did: 1 Can black beans, 2 cloves garlic, cumin & paprkika (about a teaspoon each), salt and pepper to taste, and enough olive oil that it would blend smooth. Tahini is too expensive, so i omitted, and i forgot about the lemon and remembered after I already put it away-- but it was still great. Instead of the olives (i didn't have greek) I used about 2 teaspoons of olive juice from a jar of green olives I had in the fridge. This is going to be my new go-to snack.

Rich and Simple French Onion Soup

This was absolutely delish!!!! I followed the recipe, except I decreased the amount of butter. I probably put a 1/4 cup instead of 1/2. I didn't have sherry so I used red wine that I had leftover. Per someone elses review, I added 2 dashes of worsheshire sauce. I bought Gueyre (sp?) cheese (expensive- so I will prob just use provelone/swiss next time) but absolutely delish!!! I toasted the bread in cubes too before placing the cheese on top. SO GOOD! Just as good as actual french onion soup I had in Paris. Will be making this again!

Black Bean Brownies

This recipe is great. I made a few revision based on other reviews: 1) I used 1/2 cup applesauce instead of vegetable oil 2) I used extra cocoa powder mostly regular and then added some special dark 3) Omitted the coffee b/c I didn't have any instant around 4) Bake Time says 30 mins, but it takes me about 40-45 to cook all the way through 5) Put a teaspoon of baking powder Added: walnuts & special dark chocolate chips + chocolate protein powder Delish. The first time I made the recipe minus "add on's" and it was good too!
