Mojo Grilling Marinade

Absolutley delicious! This recipe is perfect for truly traditional cuban or puertorrican style dish, or simply as a side dip for any meat. However, I suggest adding about 1/4 cup white vinegar as well to this recipe if using the mojo as a pre-seasoning marinade for pork, beef, or chicken, mojo-style roasted turkey. Let meat marinade for at least 6 hrs in the refrigerator (preferably overnight) and I guarantee, you will absolutely love it!

Puerto Rican Pork Roast

Absolutely delicious! .. I made a baste out of all the ingredients on here (garlic, salt, pepper, fresh oregano chopped in a food chopper) mixed with the olive oil and added a teaspoon of white vinegar to help tenderize the pork. For a better taste, let marinade overnight .. With the Yucca, I served with a Extra Virgin Olive Oil & Thinly chopped Garlic dressing (mojo).

Pollock Montreal

Excited to see a Pollock recipe on here. I skipped the cheese and added garlic and olive oil. Sauteed yellow and red peppers along with the onions instead of green peppers on a separate skillet. Gave it a delicious Mediterranean/Spanish kick.

Eggplant Parmesan

I liked this recipe very much. Like others who've rated it, this is sooo much better than the fried, breaded version just because it is healthier! Adding the fresh tomatos and fresh basil makes it taste more authentic italian as well. I would consider covering the baking pan and layers of eggplant with marinara or tomato/basil sauce (preferred) just to ensure the eggplant does not 'show' (some people just don't like the appearance of the eggplant being noticeable once being cooked) .. almost similar to making a lasagna. Overall though, the taste is amazing ..
