Easy Cherry Tomato Corn Salad

Good and refreshing. I was going to give it three stars but added one because it was quick to assemble. A similar recipe is Heather's Cilantro, Black Bean and Corn Salsa, which I like better because it has more of a zing and it can be eaten plain, like a salad!

Quick and Easy Mexican Chicken

Surprisingly delicious, an extra star for easy! I cooked the chicken breasts in a G Foreman grill, placed them in a baking dish, poured T Bell chunky taco sauce over it, sprinkled with shredded cheese and baked for about 15 minutes until it started to bubble around the edges. Sprinkled some green onions over the finished dish for color. Served with a dollop of sour cream, brown rice and a salad. Will make this again for sure!

Pineapple Grilled Pork Chops

Very delicious! Made a separate marinade and used that for extra sauce to drizzle over the finished chops. Reduced and thickened the sauce on the stove with a little cornstarch. Used fresh pineapple which was cut into rings and a separate can of pineapple juice was used for the marinade (1/4 cup for a single recipe). Served with fried rice. Works great with chicken breasts too.

Inside-Out Grilled Cheese Sandwich

Genius! I never thought to add cheese to the outside so that the entire sandwich is browned cheese, bite after bite. Previously, whenever I would make grilled cheese, I'd let some cheese hang off the edge of the sandwich to get browned and crisp and always saved that part for the last bite. To the doubters watch the video - it really is the method that makes this sandwich sooo delicious. Thanks, Chef!

Peanut Butter and Pumpkin Dog Treats

Our three dogs loved them! I followed the recipe exactly except that I subbed a half cup of oatmeal for a half cup of flour. The dough was mixed in a Kitchen Aid mixer and was super easy to roll out and cut into shapes. After about 30 minutes of baking, I turned the oven off and left the door closed for about an hour longer and they got nice and crisp. The dough shapes were placed real close together on the baking sheet as they do shrink. One recipe made a little more than two half-sheet pans (18x13") of dog bone-shaped cookie treats.

Taco Seasoning I

Really good! I added two tablespoons of chopped dried onions and kept everything else the same. One recipe was perfect for 1-1/4 lb of hamburger.

Chef John's Pita Bread

Great tasting homemade pitas. I followed the recipe exactly, except that I used an electric griddle heated to 400 instead of a cast iron pan. Some puffed up and some didn't. I used a knife to start splitting the ones that didn't puff up, then carefully finished opening by hand. Made Holly's Hummus to go with and they were a hit. Thanks, Chef John for the great recipe and video. I will be making these many more times!

Holly's Hummus

Sooo delish! With the exception of leaving out the basil, I made it exactly as written. The Spanish olives gives it great flavor along with the mix of garlic and lemon juice. Didn't require additional salt. I made Chef John's Pita Bread to go with it and it was fantastic, couldn't stop eating! I would recommend doubling the hummus recipe as it doesn't make enough to go around after you are done sampling! Thanks for the great recipe!

Heather's Cilantro, Black Bean, and Corn Salsa

Refreshing and addictive! Served with tortilla chips and everyone couldn't get enough of it. Definitely use the entire amount of fresh lime juice and cilantro and, fresh tomatoes instead of canned. Also would add an additional avocado next time. Be sure to refrigerate overnight. Thanks for the great recipe Heather!

Chinese Napa Cabbage Salad

Very good salad! Stored the shredded napa cabbage, ramen blend and dressing separately. The cabbage keeps for a few days and you can quickly toss it with the dressing just prior to serving. Then, top with ramen blend and you have a quick, crisp salad. Modifications made: Bean sprouts were added and the ramen mixture was fried in 1 Tblsp canola oil instead of butter and it still was wonderfully crispy.

Easy Morning Glory Muffins

These are so good and moist! Tweaked it a bit replacing all of the oil with applesauce, all of the sugar with splenda, and used all white whole wheat flour. Baked directly in greased muffin tins without paper liners, otherwise they would have stuck to the paper due to the lack of oil. What makes these great is the formula and method. Thank you Debbie!

Quick Chicken Piccata

Watched the how-to video for tips and the chicken piccata turned out awesome! I especially liked the tip about smashing half of the capers. Other than adding a bit of chopped garlic (my personal preference), I followed the recipe exactly. The ratio of the various ingredients are spot on. Thanks Chef John!

Kentucky Biscuits

My husband loved 'em and said I hit a home run with these! The only negative comment I have is that they yield 12 tiny biscuits (2"x2" squares) so the next time will double the recipe and cut them into larger pieces.
