Chinese Napa Cabbage Salad
Very good salad! Stored the shredded napa cabbage, ramen blend and dressing separately. The cabbage keeps for a few days and you can quickly toss it with the dressing just prior to serving. Then, top with ramen blend and you have a quick, crisp salad. Modifications made: Bean sprouts were added and the ramen mixture was fried in 1 Tblsp canola oil instead of butter and it still was wonderfully crispy.

Easy Morning Glory Muffins
These are so good and moist! Tweaked it a bit replacing all of the oil with applesauce, all of the sugar with splenda, and used all white whole wheat flour. Baked directly in greased muffin tins without paper liners, otherwise they would have stuck to the paper due to the lack of oil. What makes these great is the formula and method. Thank you Debbie!

Quick Chicken Piccata
Watched the how-to video for tips and the chicken piccata turned out awesome! I especially liked the tip about smashing half of the capers. Other than adding a bit of chopped garlic (my personal preference), I followed the recipe exactly. The ratio of the various ingredients are spot on. Thanks Chef John!
