Swedish Meatballs I

Reviewed: May 8, 2005
This is great comfort food. I added about 1 tsp of tastefully simple seasoned salt and some breadcrumbs to the meatballs, and a dash of nutmeg, pepper, 4 oz sour cream, and sauteed mushrooms to the sauce. After baking the meatballs as directed, I put them in the crockpot with the sauce for 5 hours on low. Heavenly! Thanks for the recipe.

To Die For Blueberry Muffins

Reviewed: Apr. 24, 2012
These were awesome muffins - like others said they taste like they are from a professional bakery. I made 6 large muffins and I had to cook them for 35 minutes for them to be done in the middle. A trick I learned is to roll the blueberries in some of the flour before adding to the batter which will prevent them from sinking to the bottom of the muffin. Oh, I used whole wheat pastry flour for this recipe and it worked really well.

Wedge Salad with Elegant Blue Cheese Dressing

Reviewed: Feb. 26, 2012
This was so delicious that I ate it again for breakfast the next morning! I only used 1/2 lb of blue cheese and I also added crumbled cooked bacon. This is the best way to eat iceberg lettuce. Thanks for the recipe!

Baked French Fries I

Reviewed: Nov. 30, 2011
Delicious. I made them into ¼” sticks (like regular french fries) and therefore bumped the temp down to 425 and flipped after about 30 minutes. I also just used Lawry's seasoned salt instead of the other spices. They were crispy and so much better and healthier than anything you can get at a restaurant. I will make these many more times in the future

Best Lemonade Ever

Reviewed: Oct. 23, 2011
We make this all the time. It only takes minutes. We boil the sugar and water in the microwave, then add ice to cool down. I use an organic, not from concentrate lemon juice that works just as well as fresh lemons in my opinion.

Beefaroni

Reviewed: May 26, 2011
We really love this simple dish. I add corn to make it how I remember eating it when I was a kid. Edit: I've also used mozzerella instead of cheddar and it's delicious that way too.

Creamy Rice Pudding

Reviewed: Feb. 28, 2011
I didn't use raisins and it was still great. Very creamy and satisfying. And a great way to use up leftover rice. I used Arborio rice which might have helped with the creaminess.

Corn Cheese Chowder

Reviewed: Aug. 16, 2010
I used fresh corn (about 6-7 ears) and also added 4 oz cream cheese. So yummy and easy to make. We have made this many times. I use a stick blender at the end to puree everything except for some of the corn which I add after pureeing.

Tomatillo Salsa Verde

Reviewed: Aug. 16, 2010
This was a great way to use my tomatillos from the CSA. This was so delish and tasted very authentic just like the salsa I get at the restaurants. I didn’t have fresh herbs, so I used dried and it still tasted great.

Quick and Almost-Professional Buttercream Icing

Reviewed: Jul. 21, 2009
After reading the ingredients on a carton of Pilsburry buttercream frosting, I decided to try this instead. It was delicious, and I will never buy store bought frosting again with all it's food chemicals and trans fats.

Roast Sticky Chicken-Rotisserie Style

Reviewed: Jan. 17, 2007
To the previous reviewer who gave one star: Ummm, maybe you should just go buy a rotisserie chicken from the grocery store...no effort at all then. This was a great recipe...and I enjoy knowing what spices went into the rub. Will make again and again

pretty good. I omitted the nutmeg and used powdered sugar instead of granulated to make them more melt-in-your-mouth.

Amazing! I have been looking for a thin crispy gingersnap recipe and this was perfect. I did substitute real butter for the shortening to eliminate any trans fats.
