Corn Cheese Chowder

I used fresh corn (about 6-7 ears) and also added 4 oz cream cheese. So yummy and easy to make. We have made this many times. I use a stick blender at the end to puree everything except for some of the corn which I add after pureeing.

Tomatillo Salsa Verde

This was a great way to use my tomatillos from the CSA. This was so delish and tasted very authentic just like the salsa I get at the restaurants. I didn’t have fresh herbs, so I used dried and it still tasted great.

Cream of Fresh Tomato Soup

Very good. I did remove the skin from the tomatoes before adding to the soup (create an x in the skin and then boil for a minute or so until the skin starts to separate). I also used a stick blender to puree everything and I also added 4 oz of cream cheese just to make it a bit creamier. Next time instead of pureeing everything, I will leave a few chunks of tomato in there to make it heartier.

Chicken and Broccoli Alfredo

Not bad. I used leftover rotisserie chicken and I replaced the water with chicken broth. I omitted the red pepper since I didn't have any of that on hand. I also grated some fresh parmesan over the top. It was very flavorful quick weeknight dinner.

Quick and Almost-Professional Buttercream Icing

After reading the ingredients on a carton of Pilsburry buttercream frosting, I decided to try this instead. It was delicious, and I will never buy store bought frosting again with all it's food chemicals and trans fats.

Raspberry Peach Crumble

i doubled the crumb topping like others said, but it seemed to be too much. the fruit created quite a bit of juice - next time i would add some tapioca pearls to help soak up the extra juice.

Roast Sticky Chicken-Rotisserie Style

To the previous reviewer who gave one star: Ummm, maybe you should just go buy a rotisserie chicken from the grocery store...no effort at all then. This was a great recipe...and I enjoy knowing what spices went into the rub. Will make again and again

Crispy Gingersnaps

Swedish Meatballs I

This is great comfort food. I added about 1 tsp of tastefully simple seasoned salt and some breadcrumbs to the meatballs, and a dash of nutmeg, pepper, 4 oz sour cream, and sauteed mushrooms to the sauce. After baking the meatballs as directed, I put them in the crockpot with the sauce for 5 hours on low. Heavenly! Thanks for the recipe.
