This was my first attempt at quiche and it came out absolutely delicious! I read the comments before trying out the recipe, so I had an idea of what I was getting into. I omitted the mushrooms and feta cheese, used only 1 tbsp butter + 1 tbsp olive oil to sautee the veggies, used a little more than 1/2 cup of SKIM milk, and used only 2 eggs. I also added 1/4 cup parmesan cheese to the egg mixture along with a couple tbsp of fresh chopped parsley. I had just the right amount of veggies + egg mixture to fill the 9" deep dish crust. This was a quick and easy meal that I feel I can make any time. Highly recommended!
