Chicken Fried Chicken

Yum! This was my first time making fried chicken and this recipe couldn't have been easier to follow. My only additions were to season the chicken with salt, pepper, onion powder & garlic powder... plus i added a little cayenne to the flour mixture and a dash of hot sauce to the egg. It turned out absolutely delicious. Thanks for a great dinner!

Satiny Chocolate Glaze

Great recipe! This was very easy to make, had a wonderful glaze consistency and tasted heavenly. I don't have a double-boiler so I used a pyrex bowl perched on top of a small saucepan.

Banana Bars

I found this to be a little dense - more like banana bread than a cake or bar. The flavor is good, although I added an extra banana as per reviews from this site. I also omitted the frosting and used the fluffy peanut butter frosting from this site instead - great flavor combination! This recipe was a good way to use my over ripe bananas but I don't think I will try this one again.

Twice Baked Potatoes

These potatoes were delicious! I omitted the bacon (I simply don't like it) and used only half of the cayenne (was still plenty spicy). Other than that I followed the recipe exactly and it came out better than I expected. The veggie mixture really makes the dish. I will definitely make this again!

Sue's Taco Salad

Absolutely delicious!! I made a couple substitutions (ground turkey for beef, corn chips for flavored ones) but everything came out wonderfully. The ranch dressing + taco mix combo is outstanding. The flavor resembles "cool ranch" chips or the "baja" sauce at a certain taco chain. Will definitely make this again!

Sweet and Sour Meatloaf

I give this recipe 5 stars for flavor, the sauce was a perfect blend of sweet and sour. However, my loaf was too wet. The meatloaf didn't hold its shape when it was time to serve (it broke into pieces) and the texture was mushy and not firm. I did use ground turkey instead of beef.

Corn and Black Bean Salad

This is an interesting recipe! I really enjoyed the unusual pairing of balsamic vinegar and cumin. The only thing I changed was using a 15oz can of corn, because it's all I had on hand.

Pico de Gallo Chicken Quesadillas

I made these quesadillas for dinner tonight and I have to say they are Outstanding! This is quite possibly my favorite recipe on this website thus far. I did borrow another reviewer's suggestion and marinated the chicken similar to that of the "lime chicken soft tacos", which really enhanced the flavor of the meal. This will definitely be a regular in my menu rotation!! Update: I made these again tonight and threw in some chopped mushrooms that I needed to use up. Great flavor! I would consider subbing the mushrooms for chicken to go completely veggie. Yum!

Macadamia Nut White Chip Pumpkin Cookies

This recipe turned out pretty good. I substituted chocolate chips and pecans because that is what I had on-hand. The end result looked like cookies but tasted more like muffins, consistency-wise. I used slightly more pumpkin than the recipe called for and did not have any problems with the dough being too wet or with the finished cookies crumbling at all.

Downeast Maine Pumpkin Bread

Absolutely delicious! I made one large loaf and 11 muffins with this recipe. The only changes I made were to make it slightly healthier: 1/2 cup veg. oil + 1/4 cup applesauce instead of full oil; 1 1/2 cups brown sugar + 1 1/2 cups splenda for sugar; and I didn't have cloves so I used extra nutmeg. I will definitely be making this receipe again!

Spinach Quiche

This was my first attempt at quiche and it came out absolutely delicious! I read the comments before trying out the recipe, so I had an idea of what I was getting into. I omitted the mushrooms and feta cheese, used only 1 tbsp butter + 1 tbsp olive oil to sautee the veggies, used a little more than 1/2 cup of SKIM milk, and used only 2 eggs. I also added 1/4 cup parmesan cheese to the egg mixture along with a couple tbsp of fresh chopped parsley. I had just the right amount of veggies + egg mixture to fill the 9" deep dish crust. This was a quick and easy meal that I feel I can make any time. Highly recommended!
