Microwave Peanut Brittle

EVERY microwave is different, even with the same wattages, because older microwaves cook more slowly than new ones (has to do with the magnetron)! You must watch this as it cooks and use the times as a suggestion. Go by color! I burned a batch or two before I worked it out on my microwave. When you get the timing right, this recipe can't be beat for taste and ease of making. I's truly addictive! Spray your spatula with Pam spray.

Mexican Corn

This is an excellent dish. But I only used two jalapeno peppers, and it was almost too hot to eat. We northerners aren't used to so much heat! I can't IMAGINE 10 peppers in it!

Pumpkin Pancakes

This is a great recipe. I, too, used buttermilk and omitted the vinegar, but added 1/4 tsp. of baking soda. I also used self-rising flour (omitting the baking powder and salt). I also added 1/8 tsp. each nutmeg and cloves. I made a few pancakes with the thick batter, then added a few tablespoons (I didn't measure) of milk to thin it down. The taste and texture of the pancakes didn't appear to be altered, only the thickness. I chopped up some pecans and added to the batter (I love nuts in my pancakes) - yummy! I will have to experiment further, though, because this recipe made 15 4" pancakes - way too many for the two of us. This recipes goes in my file of favorites!
