Black Bean Avocado Salad

Great summer salad. I followed the recipe exactly except that I added a bit more lime juice (probably about a tablespoon.) It tasted great. After I prepared it and tasted it (it was great as is) I added some chopped cilantro because I had some I wanted to use up. It was good as well but I think next time, I won't add the cilantro, I liked it better without (and I usually like cilantro quite a bit.) Ate it with tortilla chips. Great!! I will take this to cookouts often. I have to eat gluten free and this will be a great dish to take that won't make me jealous that I can't eat most of the other stuff!!

Baked Honey Nut Chicken

Ok, I hate rating a changed recipe but the basics are very good. I have to eat gluten free so I substituted rice Chex for the bread crumbs. I just pulsed the cereal, about 2 cups, with about 1 1/2 cups whole pecans in my food processor until it looked the right size. I also pounded my chicken to tenderize it then put it in the egg/honey mix for a couple hours because I had the time. I will make this again! I gave it 4 stars because I changed it and think that the cereal was better than bread crumbs would have been for me.

Pecan Snack

These are fantastic and very easy. I followed the recipe once and a second time I added 1/2tsp vanilla to sugar mix-I had to work it in until it was incorporated. I also tried adding it to the egg whites but the vanilla flavor was better when mixed with the sugare mix. No matter, the base recipe is very good and well worth it. They do not stick around long! My mother-in-law doesn't really cook anymore but she wanted this recipe to make for gifts. So easy!!! One more thing, I used parchment paper for easy stirring and clean up.

Salsafied Chicken and Rice

My whole family loves this. It is now in my regular rotation. I don't use instant rice though. I cook the rice separately in chicken broth, using about a cup of rice. I mix it all together to simmer for about 10 minutes before serving. I also use taco seasoning on the chicken. I serve this with sour cream, tortilla chips and avocado if I have it.

Perfect Turkey

Made this for Thanksgiving last year and it was the best turkey I have made. Much easier than making all the flavored brines (which I have tried) and just as flavorful. Will be using this one again!!

Delicious Ham and Potato Soup

We really liked this. It was just what we needed on a very cold night! I think this soup would be great as written but I added 2 sliced carrots to it and about a cup of cheddar cheese (needed to use it up). I have to eat gluten free so for thickening I used almost 3 T. of potato starch. It was just right. Will be making this one again!
