Indoor S'mores

Reviewed: Jan. 21, 2009
I have been making these since I was a kid. I use 6 cups Golden Grahams and 4 cups marshmellows. Once the marshmellows and chocolate have melted, I pour in 4 cups of the golden Grahams and stir and mix well. Then I pour in the additional 2 cups golden Grahams, 1/4 cup chocolate chips and 1/2 cup mini marshmellows. This way the last part of the cereal tastes a bit crunchy as it is not drowned in the chocolate and the marshmellows and chocolate chips do not melt for an added flavor. YUMMY! Always a hit camping!

Caribbean Holiday Shrimp

Reviewed: Jan. 15, 2003
My husband and I loved this recipe. It is perfect as a cold appetizer with toothpicks. I used it on my salad (cold) and used the left over juice as a dressing. I liked it so much I even tried it hot over noodles mixed with my favorite veggies, a little white wine and the left over juice. Definitely a keeper!

Brie Cheese Appetizer

Reviewed: May 12, 2010
So easy and delisious. I used this for a Mother's day appetizer and used the rolled out cresent rolls for the crust. The crust was thick, which I thought it should have been thinner at first but when eating it turned out great as you use the thick crust and the dipper. I also served with sliced apples. Great recipe which you can change up however you want.

Waffles I

Reviewed: May 12, 2010
I rated this a 5 but I used this as a base recipe and changed it quite a bit to make it more flavorful as suggested. I added 1 tbls white vinegar to the milk and let sit for 5 minutes to "sour"the milk (buttermilkish). I used 1 1/2 cups WW flour, 1/4 cup wheat germ and 1/4 cup blue cornmeal. Then added 1/4 cup applesauce and 1/4 cup oil, 2 packages of splenda, 1 tablespoon brown sugar and lemon zest. I used the other suggestions and separated the eggwhites and folded them in last. I chose to add fresh strawberries I had. Was healthy and so good. My kids loved them.

Sweet and Sour Pork III

Reviewed: Mar. 24, 2010
This was a case where I looked at all the ingedients, knew I had them and started....only to find out how much oil and sugar was involved. When I read 3/4 cups sugar, I was about to stop cooking but thought this would be a good treat at best. Well it was soooo sweet. Keep in mind, I always try to eat healthy as I have children that learn from my cooking and eating habits... If that is you, this is not the recipe for you. Basically I will not be making again. If you do make it, I would suggest cutting WAY down on the sugar, baking the chicken cubes (with the sauce it would not taste different at all) and steaming carrots, peas and green beans to the mix.

Cooking Light magazine's Indian Chicken Curry

Reviewed: Oct. 23, 2002
This recipe had very little to no flavor. I tried adding twice the spices and it still lacked a taste - especially a curry flavor. I love curry and this did not taste much like it. I would not try this recipe again.

These are light and fluffy and a great texture. I tried rolled in sugar and with the glaze the submitter suggested and must definitely use the glaze. Was a perfect light tasting cookie perfect for a luncheon or any time!

Blue Cornmeal Pancakes

Reviewed: Feb. 2, 2010
These were very good. I did not add the pine nuts but did add blueberries. Would be good with a tad of lemon zest as well. It was not lacking any sweetness. Once you add the syrup, it is plenty sweet.

I thought this was nothing special. It tasted a bit like a frozen dinner. It was ok but I do not think I would make it again.

Extra Easy Hummus

Reviewed: Apr. 11, 2010
I am addicted! When I found out how fatening Tahini was, I vowed to not eat hummus for a while, since I cannot stop eating it. This is a great way to get my hummus fix without all the fat. I do add pepper and 1 tablespoon lemon and it is delicious. Great with baked rice chips or carrots.

Very easy and tasty. I did add a teaspoon of vanilla but that is the only change and they turned out moist, chewy and yummy!

Curried Carrot Soup

Reviewed: Nov. 14, 2004
This was excellent. Ised fresh carrots from my garden. I made a few changes. I did not have vegetable broth so I used chicken broth. I added a celery stick and a fresh bell pepper. I also added about 1 table spoon od sugar, a pinch of ginger, a teaspoon of cinamon and a dash of nutmeg to give it a sweeter taste. I also used about 2 tablespoons of curry powder. I pureed in my blender 2 times to give a creamier texture. Wonderful on a cold day.

The Best Banana Pudding

Reviewed: Jan. 15, 2003
This was so tasty! We did not use quite as much bananas - about 4 - and it turned out great. Next time I am going to crush the wafers. This is not good the next day, the wafers get soggy and bananas old so make sure you eat it fresh! I used all lowfat and nonfat ingredients and it was still good!

Easy Morning Glory Muffins

Reviewed: Jan. 25, 2012
So good! I made healthier by adding 1/2 apple sauce and 1/2 oil and used 1/2 sugar and 1/2 brown sugar as I ran out of white sugar. Tasted so good, moiste and sweet. Next time I will reduce the sugar even more as it already has natural sweetener!

Slow Cooker Chicken Taco Soup

Reviewed: Feb. 26, 2010
I, like others, was hesitant on the beer in the recipe but no hesitation now. I typically like the brothy tortilla soup and this has less broth and still so flavorfull! I used trader joes frozen corn because to me it tastes like fresh corn, added juice of 1 lime, 3 chopped tomatoes and added cilantro. I also used the seasoning mix suggested by the submitter (under highest rated reviews) and it makes a HUGE difference. Packaged taco seasoning is overwhelming and I rarely use. Thanks for the soup recipe and the taco seasoning recipe!

Caesar Salad Supreme

Reviewed: Jan. 14, 2008
This was excellent as I am very picky on my caesar salads. In order to make it blend well, I put all ingredients in blender for a great creamy texture. I reduced the mayo to 1/2 cup and added about 1/4 cup of olive oil to reduce the heavyness. ( I am used to making with no mayo). I also added one egg for a fluffy texture and 1-2 tablespoons of red wine vinegar and a dash of tabasco for a zing. It makes it a bit spicy, how I like it, and definitely does not lack flavor. An excellent meal and the dressing is even better the longer it sits.

Shepherd's Pie VI

Reviewed: Dec. 18, 2007
I thought this would be way too heavy but not too bad at all. I did make some changes: I used 1/4 cup Worsteshire sauce and 1 cup water with brown gravy mix as suggested by others. Next time I would still add additional garlic and herb seasoning. I added boiled sliced carrots along with a pea, corn and carrot frozen veggie mixture on top of the meat. What really made it was the mashed potatoes as I prepared as I always do. I boiled red potatoes and when done mashed with butter, light sour cream, buttermilk, seasoning salt, pepper and no salt garlic and herb seasoning to taste. Whip with beaters instead of just mash. Makes a huge difference in the overall flavor! Good with chuchilla sauce. Will make this for St. Patrick's Day every year.
