Shepherd's Pie VI

I thought this would be way too heavy but not too bad at all. I did make some changes: I used 1/4 cup Worsteshire sauce and 1 cup water with brown gravy mix as suggested by others. Next time I would still add additional garlic and herb seasoning. I added boiled sliced carrots along with a pea,corn and carrot frozen veggie mixture on top of the meat. What really made it was the mashed potatoes as I prepared as I always do. I boiled red potatoes and when done mashed with butter, light sour cream, buttermilk, seasoning salt, pepper and no salt garlic and herb seasoning to taste. Whip with beaters instead of just mash. Makes a huge difference in the overall flavor! Good with chuchilla sauce. Will make this for St. Patrick's Day every year.

Catherine's Spicy Chicken Soup

This soup was so good the night of and the next day! I made a few changes as I did not have all the ingredients. For the tomatoes, I used one can of diced tomatoes and 2 cans of stewed tomatoes (which I cut up to smaller pieces). For the beans I used one can of kidney beans and one can of plack beans. I also used 4 frozen chicken breasts instead of 8 and it was plenty! Next time I would also add okra. We served with tortilla chips on top - very tasty! It had the perfect amount of spice but may be too spicy for some. Will make many more times!

Best Chocolate Chip Cookies

One of the best chocolate chip cookies I have ever made! It really is crispy on the outside and chewy on the inside. I found it better to cook a bit longer...apx 12 minutes each. The crispier ones still stayed chewy inside. Thanks for a great recipe!

Pumpkin Roll I

Mixed reviews here. My husband loved it and I did not. It was a bit too sweet for me (Which is odd since I love my sweets) and it did not keep well...the next day it was soggy and heavy. The pumkin flavor was good and my husband loved it in the morning with his coffee.

World's Best Lasagna

Very good. I omitted the sausage and used ground turkey and it turned out great! I also added some mushrooms to the sauce and zucchini to the layers - this recipe is very forgiving to your personal taste. I like the sauce so much I freeze it in smaller containers. When I need a quick dinner, I defrost it and add to my favorite marinara sauce for semi home made spagetti, fill it in pasta shells or make a mini last minute lasagna.

Black Bean and Couscous Salad

Very refreshing! I added finely chopped celery, cucumber and cherry tomato halves to make it more of a meal. With the additions I also made a bit more dressing and used more lime and vinegar than oil. It was a hit and I have been asked to make it over and over again!

Chuck's Favorite Mac and Cheese

I must have done something wrong although I do not know how since this was the easiest recipe. It just did not taste right as the cheese taste was not consistent as it was not creamy. The nest day it was dried up and not good for left overs.

Annie's Fruit Salsa and Cinnamon Chips

It was 95 degrees yesterday and this fruit salsa was just perfect! Great on a hot day. I followed the recipe but used frozen rasberries which seemed to make it mushy. Next time I will use fresh berries, add pineapple, use one fuji apple for a tarter taste and reduce the sugars in 1/2. Chips were wonderful~ Good unique recipe!

Slow-Cooker Chicken Tortilla Soup

Very easy to make and uses ingredients I almost always have in stock. I added black beans and more chili powder. Next time I will omit the water and just use chicken broth as I had to add more salt to enhance flavor - I think by omitting water, it will enhance the flavor. I served with hot sauce and jack cheese.

Creamy Chicken Lasagna

Was better tasting than it looked - a bit too soupy. Next time I would use less water. It was a good recipe but more of a comfort food and "stick to your gut" kind of food. Heavy!

Killer Shrimp Soup

This was really good and great on a cold night. I did not have celery seed or fennel seed so I just added the ends of my celery stalk which has all the flavor. I also used 1/2 cup of UNSALTED butter instead of the full cup of salted butter and it turned out great. I like to add hot chili sauce to my individual serving as I like it spicier than my husband does. I also took the tails off the shrimp. Next time I would add chopped celery and sliced mushrooms. You can add pretty much anything to this yummy broth soup! Thanks for the recipe.

Black Bean and Corn Salad I

This was good but I could not resist adding celery, green bell pepper, fresh cilantro instead of dried (and much more of it) and a must have - tomatoes! I used Italian dressing I made from a package and used more vinegar than oil. Very good.

Curried Carrot Soup

This was excellent. Ised fresh carrots from my garden. I made a few changes. I did not have vegetable broth so I used chicken broth. I added a celery stick and a fresh bell pepper. I also added about 1 table spoon od sugar, a pinch of ginger, a teaspoon of cinamon and a dash of nutmeg to give it a sweeter taste. I also used about 2 tablespoons of curry powder. I pureed in my blender 2 times to give a creamier texture. Wonderful on a cold day.

Mushroom Pork Chops

This was very tasty however I added some additional flavor. To dilute the canned soup taste, I added a splash of red wine, about 2 tablespoons of light sourcream, chopped rosemary (a must!)and topped off with fresh lemon juice and a pinch of paprika. I served with rosemary/lemon pepper potatoes and the sauce was a great addition to the potatoes!

Baked Pork Chops I

This was a good meal if you like cream of mushroom soup. I reduced the baking time. I baked for 35 minutes then added the sauce and baked for another 30 minutes and the pork was well cooked. In the sauce I added sour cream, mushrooms, rosemary, lemon and seasoning salt. I think without these items this would be a bland sauce. I would have added celery but was out of the time but will add next time for an added kick. I also served with green beans and the sauce on the green beans was GREAT!

Chocolate Eclair Dessert

This was 5 stars for how easy it was and tasted great as well. I made my own whipped cream instead of the cool whip and instead of chocolate frosting I topped it with sliced bananas and choclate sprinkles. Maybe not the chocolate eclair but still very tasty and light!

Down Home Macaroni and Cheese

This was good. I made it for a group of kids and they loved it. I am not a processed cheese fan so it was not my favorite. I did ad about 1/2 cup more noodles because 2 cups did not look like enough BUT when it was baked, it soaked up all the cheese and 2 cups would have been perfect!
