Black Bean and Rice Enchiladas

To spice it up a bit, I used a mix of 1 1/2 Tbs of chipotle chili pepper and 1 1/2 Tbs of med hot chili power which gave it a nice mild smoky flavor. A keeper.

Russian Tea Cakes I

melt in your mouth. The cookies don't golden up like you would expect but they are nicely baked at 12 mins. I rotate my cookie pans top to bottom, front to back. Excellent and easy.

Zippy Shepherd's Pie

I made this for book club last eve and they loved it!!! I used veggie crumbles (tofu hamburger), vegetable broth, skipped the tomatoes. I used 1.5 lbs of potatoes and 2 Tbs butter. Baked 350 for 30 mins to heat through, put the shredded cheese on top and broiled for a few mins. The curry was a nice addition..not to strong but slightly more than a hint. Excellent!!!

Cooking Light magazine's Indian Chicken Curry

I've made this numerous times with great success. It's got a kick (I use hot chili powder and hot curry)I used only 3 cups water as 4 made it too watery for my liking. A sprinkling of golden raisins on top gives it a nice sweet/spicy taste. I also have made the spice mix packets for gifts and attach the recipe(great for those who love good food but don't have the ingredients or desire).

Cheese Fondue

Impressive and easy. I didn't have any sterno for my fondue pot so I used a double boiler. I rubbed the pot with garlic, added the wine (Bogle chardonnay) then the grated cheese tossed with the flour...slow and steady. I also added the recommended lemon juice, about a tablespoon. No clumps, nice and smooth. Served at the table in the double boiler to keep the cheese fluid. Next time I might try adding another 1/4 cup wine to thin it out just a bit. This is the recipe to use if you have never made fondue before. Do make sure you use good quality cheese. I used Swiss Emmentaler and Gruyere.

Spinach Beef Stir-Fry

Nice and quick. I didn't have 5 spice powder but found a recipe and made my own. Substituted the veggies with what I had on hand, very versatile. Would like a bit more sauce for the rice.
