Buttery Soft Pretzels

Reviewed: Mar. 17, 2012
Excellent recipe with very well written instructions! 5 cups of flour was a bit much and I had to add quite a bit of water prior to kneading but they still turned out wonderful! The kids loved them with cheese sauce. I brushed them all with melted butter as they came out of the oven...delicious! Thank you very much for sharing!

Easy Morning Glory Muffins

Reviewed: Oct. 8, 2011
I had to make some alterations due to the ingredients I had on hand and to make the muffins lower fat. I used whole wheat flour, brown sugar, about 1 cup carrots, two apples and sweetened coconut. I omitted the nuts, substituted applesauce for the oil and added two teaspoons of powdered chai tea latte. I know that is a lot of changes but in the end, they were delicious. My girls each gobbled up two. I will refrigerate the leftovers for breakfast all week long.

Hudson's Baked Tilapia with Dill Sauce

Reviewed: Sep. 29, 2011
Instead of baking the fish, I dredged it in whole wheat flour and cajun seasoning then pan fried in a butter/ olive oil mixture. It turned out beautiful and delicious. The sauce was also great. A new favorite in our home.

Boilermaker Tailgate Chili

Reviewed: Sep. 16, 2011
My search for a good chili recipe is over, this is the one. It was so good and versatile. I cut the recipe in half and toned down the spicy flavors for my kids. It still tasted great! Thank you so much for this recipe!

Cheesy Rigatoni Bake

Reviewed: Aug. 2, 2011
This recipe is good and something I will make again with just a few tweaks. Normally, baked rigatoni is nothing special around our house; just something I through together when I have very little time. Tonight, I was going with the same ol' when I found this recipe. My pasta was already boiling so I had very little time and not all the listed ingredients. I accidently used two eggs but I was pleased with the result. I used jarred spaghetti sauce and I think that added a nice flavor. I mixed all the ingredients together instead of layering them. Finally, I tempered the eggs with the bechamel sauce (white sauce) because I was afraid they would scramble (they actually were fine). Next time, I will add the parmesan cheese to the bechamel sauce to give it a little flavor. Thanks for the recipe!

Tzatziki Sauce

Reviewed: Jul. 30, 2011
Please read reviews first...I wish I did. The ingredients and flavor of this recipe is worth 4-5 stars however; the directions are worth 1-2. I decided to split the difference. First, you have to ring or strain the chopped cucumbers before using them. Also, the yogurt should also be strained for at least an hour. I would caution against putting yogurt in a food processor as it breaks it down; especially when combined with lemon juice. I would think finely chopping the cucumbers and garlic and sticking with a bowl and spoon would be best. I will make this recipe again because I thinking following the above directions will greatly improve the end result. I only had about an hour to make this before dinner so I went against my better judgment. Next time I will allot at least two.

Baked Chicken Nuggets

Reviewed: Jul. 16, 2011
These chicken nuggets were great and easy to make. PLEASE, EVERYONE: IF YOU ARE GOING TO RATE A RECIPE, PLEASE FIRST FOLLOW IT!!! IT IS SO ANNOYING TO READ REVIEWS (ESPECIALLY POOR ONES) AND SEE THAT THE COOK DIDN'T FOLLOW THE RECIPE AS WRITTEN. It is great to make changes and add your own twist but that shouldn't affect how you rate the recipe.

Chili con Carne II

Reviewed: Jul. 5, 2011
This is a great chili recipe that I will definitely be making again. Like some reviewers suggested, I used only one cinnamon stick but I hardly tasted the cinnamon flavor so two would have probably been ok as well. I used Mexican spices and a poblano chili which I think is important for overall flavor. The only issue I had was my own fault. I used ground chuck and didn’t drain the fat well enough.

Mom's Zucchini Bread

Reviewed: Jun. 18, 2011
The BEST bread recipe! It has been a favorite in our family since last summer when I ended up with way too many zucchini's in the garden. I made the bread as directed, the batter did seem too thick but it isn't; it turns out great. I have made some changes over the year and usually add a 1/4 tsp nutmeg, omit the nuts and add as much zucchini as I can (about 3-4 good sized ones). Even the kids ask for it!

Excellent pancake recipe. I didn't make the the sugar frosting and just used syrup and both my kids loved it. We will be making these again for sure!

Authentic Mexican Tortillas

Reviewed: May 29, 2011
This recipe was okay but too salty. I added cheese to make a quesadilla for my daughter and it was almost too salty to eat. Alone, the tortilla tastes good but it is missing something. I wish I knew what that was. I won't likely make these again.
