Cucumber Sunomono

If it were not for a mandolin, I'm not sure I would have tried this recipe. I use English cucumbers and leave the skins on, plus have added about 1/2 tsp dark sesame oil when I've made it. The fresh ginger makes this recipe. I brought this in to work for a potluck, and it received rave reviews. Thanks for sharing!

Cranberry Sweet Potato Bake

I have always detested the traditional marshmallow encrusted sweet potato dish that is the traditional Thanksgiving fare. 2 years ago I was assigned sweet potatoes for the family dinner, and refused to bring the traditional dish. After finding this recipe, I've discovered I like sweet potatoes. This dish has been very popular the last 2 years, and always devoured. I use brown sugar instead of white, and halve the amount. I also use Trader Joe's organic dried cranberries, which are wonderfully juicy and much better than the usual dried up craisins. For a former sweet-potato hater, I must say that this recipe converted me and now will be a tradition in our family. I highly recommend it.

Pizza Crust I

Best pizza crust I've ever made, but I do have to say that I modified it just a bit. (What can I say, I almost always have to modify recipes!) To make the crust a little healthier, I substituted 3/4 cup of whole wheat flour for some of the white flour, added a tablespoon of ground flax meal, and increased water to 1 cup. In addition (and as some of the other reviewers did) I added garlic and dried basil to the crust (didn't measure, just threw it in). This dough is really easy to work with compared to the others I've made. It spreads easily without trying to retreat again to the middle of the pan. Wonderful chewy texture, and just crisp enough underneath to hold it's shape. So happy that I tried this one, albeit a bit modified from the recipe as written.

Blackberry Pie I

This one is a keeper. Brought one of the pies in to work, and the guys on the team said it was the best blackberry pie they'd ever eaten. The filling was nicely firm and sliced easily. I did reduce the amount of sugar on the top to about 1-2 T. This pie was delicious and surprisingly simple.

Flax and Sunflower Seed Bread

This is definitely a keeper! The texture is amazing - chewy, with nice bubbling, and not too dense. I modified it slightly, but this is probably going to be my most baked bread. I used olive oil instead of butter, omitted the sunflower seeds, and used flax meal instead of flax seeds. As one other reviewer said, whole flax seeds pass through mostly undigested so the nutritional benefit of using the whole seeds is much less than using the ground meal.

Asian Lettuce Wraps

Made this last night and loved it! We used the dipping sauce recommended by the previous reviewer (1 tsp sesame oil, 2 T soy, 2 T rice vinegar, 1 T chile paste), substituted ground turkey breast, fresh ground ginger, and bean sprouts instead of the water chestnuts. 1 T Sriracha added to the mix (in addition to the dipping sauce) was perfect, but we both really like some heat. Delicious!
