Fluffy Pancakes

Fantastic! I used organic whole wheat flour and whole milk. They turned out very fluffy and had wonderful flavor--not heavy at all. I did use a good amount of butter to fry them rather than the cooking spray.

Czech Roast Pork

This was fabulous! I forgot the veg oil, but it didn't affect the flavor...just made the paste a little thicker (used stone ground brown mustard). :) I used a 6.5lb boston butt roast, two onions instead of three, and omitted the beer. I did add a few cups of water to the roasting pan--enough to reach about 1/4 way up the side of the roast. I also nixed the butter and cornstarch in favor of a little Wondra flour/water slurry for the gravy. The spices were perfect, and adding water to the pan beforehand made gravy a cinch--it needed no extra salt or stock, just a little thickener. The onions added so much flavor. Perfect!! (I did strain the solids and fat out of the drippings before reducing for gravy). Since my meat was bigger, it took about 4 hours to cook. But it was delicious, and I will most certainly make this again!

Kolaches From the Bread Machine

This was a great find! We had guests for dinner, and I used this recipe to make both bread rolls (as suggested by pp) and kolaches...drizzled a confectioner's sugar icing over the kolaches, which were filled with a mixed berry compote. The kolaches tasted great even when I overbaked them! (oops) :) My kids devoured them. Very versatile dough, great flavor, and very easy to make!

Curried Chicken Rice Soup

Great comfort food! This was a great way to use up leftovers from my chicken and rice recipe (legs, thighs, rice, crm o' mushroom soup, and onion soup mix, baked). Chopped up the chicken (skinned) and added with rice when called for. Only used 1/2 cup each butter and flour, and only had one can of evap milk, but it came out plenty creamy and thick! Also doubled the curry. All in all, well worth it and a great, hearty soup with crusty bread. =0)

Spinach Dip with Water Chestnuts

FABULOUS!!! I've made this a zillion times with Knorr Veggie soup mix and a hollowed-out round loaf of Hawaiian bread (try this, and you'll never go back, I promise!) To add some festive color for a Christmas table, I've often added a few Tbsp roasted red peppers from the jar, chopped...IRRESISTIBLE!

Cheesy Catfish

This deserves more than 5 stars!! YUM! I used Panko (Japanese breadcrumbs) instead of flour, and lots of Tony's Creole seasoning instead of spices (but added blk pepper)..and it was AWESOME! I'm not much of a seafood person, but this is great! I'll be making this over and over again.

Chocolate Chip Crispies

This is GREAT! Doubled the recipe, added 1/2 stick (4T) of butter, 2T extra corn syrup, and a generous dash of salt--balanced the flavor. I substituted reduced-sugar peanut butter for half the recipe, which kept it from being overly sweet. The chocolate chips definitely melted, but it tasted great all swirled together...should be called "Chocolate Peanut Butter Crispies".

Fat Free Refried Beans

5 stars with these changes: used 2 (15oz) cans pintos (drained & rinsed), added chili powder and cumin, used only 1/2 tsp of garlic salt and just a DASH of liquid smoke, mashed the whole thing in the pan. Quicker and VERY flavorful! Since I drained and rinsed the beans, I did need the water. Great with a few tweaks!

Ground Turkey Casserole

the 5 stars is for this recipe's potential. I added tomato paste, diced tomatoes, italian seasoning, minced garlic, a little vinegar, and extra sugar. Also used sausage instead of ground turkey. I agree that it's GREAT the 2nd day, but still very heavy/rich with the cream cheese/sour cream mixture. Next time, I will cut that part in half. All in all, great casserole.

Eggnog Quick Bread

GREAT recipe! Per earlier reviews, I used only 2c of flour, and added 1/3c of sour cream--perfect! Ended up moist, golden brown, holding its shape really well...be sure to grease the pan well--it can stick a bit..and may not take as much time to bake. Thanks!

No Bake Cheesecake I

This was YUMMY! I made mini-cheesecakes out of it in muffin cups with cranberry sauce (whole berry) on top...perfect! It was a hit at our ladies Christmas potluck. I will definitely use this again.

Downeast Maine Pumpkin Bread

Too bad I can only give this one 5 stars! It deserves 10. I have made it numerous times and it is ALWAYS a hit. You can add dried cranberries, cherries, chocolate chips, you name it--always awesome. LOVE IT!!!!!!!!
