Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever

These were fabulous! I didn't follow the exact directions. I put a layer of cake batter followed by brownie batter and another layer of cake batter. They baked perfectly and the brownie was gooey and delicious. Unfortunately, after making 24 cupcakes, I ended up with more brownie batter and no more cake batter... maybe something I will have to revise in the ingredients or the amount of brownie batter I added to each cupcake!

Coconut Shrimp I

This was an amazing recipe and fairly easy to make (just don't forget to account for the time in the refrigerator). The dipping sauce recommended by 1hound_1husband is: 1/2 c orange marmalade, 2 t mustard, 1 t prepared horseradish, dash salt, and honey to taste. I added more mustard, horseradish and at least 1 t of honey to make it a bit spicier and because it tasted too much like plain orange marmalade. My family loved all of it. I also made it into a main dish rather than an appetizer by making Betsy's Mandarin Orange Salad which was a great mix because of the orange and lightness of the salad.

This recipe was good except for the red onion! It was really spicy even though I only used 1/2 an onion. Next time I make this, I will replace the red onion with another sweeter onion.

Thai Green Curry Chicken

This was great. I did not use the soy sauce and added 1/2 the amount of sugar. I would add some salt to make up for lack of salty soy sauce.

Vegetable Biryani

This was a disappointing recipe. Perhaps in step 2 the instructions should not say to simmer until the water evaporates. The biryani ended up fairly dry. Also, even though the biryani had multiple spices, the spices were so subtle and blended together, leaving the dish bland. I gave this recipe two stars rather than one because it was easy to make and did not taste awful. The dish was edible just not enjoyable. I will not be using this recipe again.

Homemade Bagels

Delicious bagels! The only issue I had was getting the dough to rise some more and kneading the dough. Other than that, the taste was fantastic and other reviews were incredibly helpful! I will make these again!

Loved it! It was easy to make! I used turkey bacon which made the dish healthier. I then added a drop of oil so that the turkey would cook better. I also took the advice to leave the tomatoes cooking longer.

Banh-Mi Style Vietnamese Baguette

This was a really great recipe. Not difficult to make, tasty, and different. My only issue is that proportions are not quite right. The recipe calls for way too much sauce and daikon! And too little carrots and mushrooms, I would double both the carrots and mushrooms (I can't believe I admit to the latter, I generally dislike mushrooms!) Otherwise, it was great! Thanks!

Winter Fruit Salad with Lemon Poppyseed Dressing

Absolutely delicious and refreshing salad! I made a few changes because I did not have all of the ingredients! Instead of cranberries, I used fresh blue berries which tasted great! I also used Mozzarella instead of Swiss cheese. Finally, I used mixed nuts instead of cashews! The salad was so refreshing, I will definitely make it again!

Banana Oat Muffins

This was the worst muffin I have ever made. I followed the advice of some writers and used applesauce instead of oil, so there was a slight change to the recipe. Other than that, I followed the recipe, yet the muffin was bland and had a really bad texture.

Fairly easy to make and it was tasty :) The one change I made was only using 1/2 cup of heavy cream and replacing the other half with plain yogurt. I will probably make this again!

Orange Chocolate Muffins

This recipe was okay. It might be 4 stars if it had more flavor! The muffins just tasted plain and it was hard to taste the chocolate and orange, even though I doubled the chocolate amount and added orange extract. I might try these again but I will add more orange extract, orange zest, and chocolate!!

Indian Chickpeas

This was very yummy! Everyone loved it. I followed some of the suggestions of other reviewers, mainly " I mashed some of the chickpeas to thicken the curry and I added 1 tsp. turmeric, 1 tsp. of cumin,1 tsp. of coriander and a little bit of cayenne pepper (around a 1/4 tsp). I used red onions and then seeded and diced the tomatoes". I must say that it was close but not as good as restaurant quality or authentic Indian chickpeas.

Asian Chicken Salad

Everyone absolutely loved it!!! I made a few changes by adding carrots, cucumbers, chow mein noodles, and canned apricots. I also cut down the oil. It was delicious!! I will make it again :)

Loved the flavor! I did cut down on the sugar by to 2 cups, switch out 1/2 of the oil for applesauce and add 1 tsp of vanilla. It was great!! I will definitely make it again!

Best Ever Banana Bread

This was a bit bland for me. Even though I added more bananas, 1 tsp of vanilla, 1 tsp of cinnamon, and sprinkled with chocolate chips, I still found it lacking in flavor. Maybe next time I would add chocolate chips throughout the whole bread.

Sweet Pepper Pasta Toss with Kale

This was too bland for me. I tripled the kale and still could have added more. I added black olives for more flavor. I also increased the cayenne pepper, but it was still dry and bland.
