Black Bean and Corn Salad II

I'm not a cook by any means, so this was very easy and right up my alley. I made a few changes to it, though. Add more lime juice, use less EVOO. I didn't have cayenne pepper, so I used some kind of Cajun seasoning that worked well. Instead of 2 cans of black beans, I would use just one next time. I sliced the kernels off two ears of corn. My boyfriend said it tasted fresh and less salty than canned corn. We had extra avocado, so we ended up using 1 1/2 instead of just one. Use 1 package of cherry tomatoes (slice them in half) instead of 2 chopped tomatoes. Add 1/2 package of feta. Like I said, super easy and very good! It made good leftovers, too.

Crazy Chicken Marinade Grilled Chicken

Very good marinade! I originally had two chicken breasts marinating in this, but our plans changed and we weren't able to grill the chicken that night. Two days later, I managed to salvage the chicken by baking it in the oven, shredding it and using it for some really tasty quesadillas! I hope to try this marinade again on the grill! UPDATE: I used this marinade again over the weekend, and it's still a five-star recipe! My boyfriend loved the flavors. Even his friend, who went to culinary school in NYC and has worked in a lot of restaurants, complimented me on the marinade. My only change would be to maybe use on less lime. Other than that, this is a keeper!

Baked Spaghetti

This was good, but not great. The only substitution I made was lean ground turkey instead of ground beef; otherwise, I followed the recipe exactly. I didn't think it had enough flavor for me, and it took an awfully long time when I could have just made spaghetti and gotten something that tasted similar.

Double Tomato Bruschetta

This was so easy to make, and it was delicious! I only made one change, per the advice of other reviews: brush the bread with olive oil before broiling. It adds just a little bit more to an otherwise perfect recipe!

Black Beans and Rice Chili

I'm a fan of this recipe! I debated between 4 or 5 stars and ultimately decided on 4 because I made a handful of changes to it. I used ground turkey instead of ground beef. I'm not a fan of onion, so I left that out. I didn't have a can of diced tomatoes, so I chopped up three roma tomatoes and added a bit more water to make up for the lack of tomato juice. Instead of using frozen corn, I used an ear of fresh corn and sliced off the kernels. I also added a jalapeno to give it a little bit of kick. Overall though, a good recipe! I can't wait to see how it will fare for lunch tomorrow. UPDATE: My boyfriend loves this recipe so much - it is now my go-to chili for him. I had to bump it up to 5 stars. I used a can of diced tomatoes with habeneros, and it gave it just the right amount of spice.

Antipasto Squares

I made these for a dinner party last night, and everyone really liked them! I used the Garlic Butter crescent rolls, which added a little bit of flavor. However, I wish I had read the other reviews before making these. When I make these again, I would follow the advice of other reviewers on how to keep the bottom crust from getting soggy. Also, I am going to try someone's suggestion of spreading sun-dried tomato pesto on the bottom crust and baking for 6 minutes before assembling the sandwiches. Overall, a good recipe and perfect for parties!

Cheesy Buffalo Chicken Dip

I followed this recipe almost exactly - the only thing I didn't do was include the celery. What I got was a soupy mixture with greasy oil covering the top. I used three paper towels to soak it up, and there was still so much oil left over. The flavors also seemed odd to me - something didn't quite click or blend together. I will give this recipe one more try, but I don't have very high hopes.

Spicy Slow Cooker Black Bean Soup

I've been on the hunt for a good black bean soup recipe for months now. This was the third recipe I've tried, and I'm so happy I found it! I will admit that I messed up the consistency - my bad, not the recipe's fault - but we ended up using the finished product as burrito filler, chicken topping, etc. The flavors were delicious! It had the perfect amount of kick to it to please me and my boyfriend, who loves it spicy. I'm excited to try this again and fix what I did last time to make the perfect soup. A couple things I did differently: I tried one reviewer's method of bringing the dry black beans and chicken stock to a rolling boil, then adding to the crock pot; they were more tender than beans I've had soak overnight! I didn't have any cayenne, so I threw in some hot sauce and Cajun seasoning I had on hand. Other than that, this recipe is excellent as is!

Chili Cumin Stuffed Chicken Breasts

I changed a few things up a bit, but only because I needed to accommodate what I had on hand. I let the chicken breasts marinate in taco seasoning, red wine vinegar, and hot sauce - my boyfriend likes it very spicy. I didn't have any green pepper, but I did throw in part of a diced jalapeno. Because I was short on time, I followed one reviewer's advice and cooked it covered in the oven at 350 for 40 minutes. Before putting it in the baking dish, I lined the bottom of the dish with some salsa. I used the leftover filling as topping. It turned out excellent, and it got rave reviews from my boyfriend!
