I'm a music freak who is slowly getting into cooking. I love to write, but I don't get many opportunities to do that anymore. I'm always looking for a new recipes, and any tips or tricks of the trade would be much appreciated!
My favorite things to cook
Anything that's easy! But I love pasta and Mexican food.
My favorite family cooking traditions
I have a lot to learn from my mom. She makes excellent cookies and treats around the holidays, and some awesome, cheesy chicken enchiladas that have become her signature dish.
My cooking triumphs
So far, I have have created three dishes that my boyfriend enjoyed. It may not be much of a triumph, but trust me - it's progress! And now, I've had a co-worker and my boyfriend ask me for cooking advice! That was definitely an ego boost.
My cooking tragedies
Yikes... there are too many to list. Slowly, though, they are becoming more of a rarity.

California Melt
I make these all of the time! They're so easy and quick to put together. I agree with other reviewers though - definitely saute the mushrooms for a little something extra.

Chili Cumin Stuffed Chicken Breasts
I changed a few things up a bit, but only because I needed to accommodate what I had on hand. I let the chicken breasts marinate in taco seasoning, red wine vinegar, and hot sauce - my boyfriend likes it very spicy. I didn't have any green pepper, but I did throw in part of a diced jalapeno. Because I was short on time, I followed one reviewer's advice and cooked it covered in the oven at 350 for 40 minutes. Before putting it in the baking dish, I lined the bottom of the dish with some salsa. I used the leftover filling as topping. It turned out excellent, and it got rave reviews from my boyfriend!

Spicy Slow Cooker Black Bean Soup
I've been on the hunt for a good black bean soup recipe for months now. This was the third recipe I've tried, and I'm so happy I found it! I will admit that I messed up the consistency - my bad, not the recipe's fault - but we ended up using the finished product as burrito filler, chicken topping, etc. The flavors were delicious! It had the perfect amount of kick to it to please me and my boyfriend, who loves it spicy. I'm excited to try this again and fix what I did last time to make the perfect soup. A couple things I did differently: I tried one reviewer's method of bringing the dry black beans and chicken stock to a rolling boil, then adding to the crock pot; they were more tender than beans I've had soak overnight! I didn't have any cayenne, so I threw in some hot sauce and Cajun seasoning I had on hand. Other than that, this recipe is excellent as is!
