Maria's Paella

Wait to add seafood and peas until rice is almost cooked. I use whatever seafood is a bargain, but try to always add lots of mussels and clams for their wonderful flavor. We also like a little heat with a bit of cayenne or hot sauce added. I've made this many times and the chicken often remains as a left over, so now I use smoked sausage to round out the meal. I too use a mix of turmeric and paprika as an inexpensive substitute for saffron.

Easy Mini Quiche

The bread crust got soggy, and the filling was bland. Next time I'll try this with phyllo dough and add some garlic salt to jazz it up a bit. It's a recipe worth playing with to get it right.

German Rouladen

I always use smoked sausage spears instead of bacon. It disappears but flawors the Rouladen wonderfully, and adds less fat. This is the first time I've put onion in the rolls, but I think it's a good addition.

Chicken Stir-Fry

Great recipe with a few tweaks. I put 1/2 of the cornstarch on the chicken and 1/2 in the water mix. I also added approx 1 tablespoon of fresh ginger and fresh garlic towards the end of cooking the vegetables. Let the water mix on the side of the pan, so the vegetables don't over cook while the sauce boils and thickens. I tilt the pan so the heat is only under the sauce. Of course if you are using a wok, push vegetables up the side of the wok while sauce cooks on the bottom.
