Mouth-Watering Stuffed Mushrooms

Refried Beans Without the Refry

WOW! These are amazing! Super simple, flavor full, and fat-free. I only mashed some, and have been eating the beans mixed with rice for lunch this week. SO good! Oh, and the onion looked like a lot, but it actually disolves into the beans. If you like beans, MAKE THIS RECIPE!!

Turkey Pot Pie

I’m giving this recipe 5 starts as is, and also for it’s versatility. I’ve made it countless times over the last 4 years as is, using chicken, and other slight variations. Last night I completely digressed from the recipe using whatever I had on hand, which was: baked chicken, carrots, celery, peas, corn, napa cabbage, a combo of veg & beef broth, and soy milk. I threw in a bunch of random seasonings, poured the mixture in a greased pyrex, topped with leftover mashed potatoes, baked at 400 for 20 min, and it turned our great! You really can’t go wrong with this recipe. It’s great as is, or use it to clean out your fridge.

Bean Soup With Kale

I made this last night, and was a little skeptical when I tasted it. It was just okay; a little bland. However, I brought it for lunch today, and after sitting overnight it is MUCH better! I gave it 5 stars for the simple prep, common ingredients, and nutritional value. I recommend not adding any salt until the next day, unless you use "no salt" cans of beans.

Beer Bread I

Talk about bang for your buck! This is the most simple and yummy bread you could whip up. I use the butter and garlic salt on top trick and that gives the bread an irresistible little kick. I make this at least once a month and have tried all different beers. Wheats seem to work the best - Sam Cherry is really delightful.

Baked Ziti I

This is one of my favorite recipes! I use low fat cheeses and lean ground turkey and it is a delicious low fat meal that I can make on a Sunday and it lasts me and my boyfriend almost a whole week! Great meal for a budget, a diet, and someone with good taste!

Ground Turkey Casserole

This was very tasty, but I did add fresh garlic, onion, stewed tomatoes, corn and a bunch of Italian seasonings to the turkey. Also, I got it down to about 11g fat per serving by using "NO YOLK" egg noodles, and all reduced fat cheeses. A great hearty winter meal!
