Adobo Chicken with Ginger

I found the vinegar to be overpowering. I already cut down on the vinegar to around 1/3 cup, based on others' suggestions, but still found the dish to be way too sour. Ended up having to add some sugar and 1/2 cup water to balance it out. The chicken turned out very tender and juicy, but I think the braising sauce needs some adjustment.

Hungarian Goulash I

Delicious recipe! Even with a leaner cut of stewing beef, it turned out very tender and flavourful with around 3 hours of cook time. Modifications I made: cut down to 1 tsp of salt, added 3 cloves of garlic, added 3 fresh tomatoes (chopped) in addition to tomato paste (reduced water to 1/2 cup only because of the water the tomatoes give out), added a splash of Worcestershire sauce, and used regular paprika because I didn't have Hungarian sweet paprika (and added around 1 tbsp of white sugar for some sweetness).

Barley Bake

Easy and tasty. I had no pine nuts so substituted with sliced almonds. Also added some diced celery and garlic, some Italian herb mix, cherry tomatoes, and chopped spinach (this one only added in last 10 min of baking). Topped off with some shredded parmesan/cheddar mix for the last 10 min of bake.

Honey-Garlic Pork Ribs

Great recipe. Very simple ingredients and easy preparation. Marinating overnight is definitely a good idea. I'd recommend using a combination of fresh minced garlic and garlic powder/garlic salt. I also used dijon mustard rather than ground mustard.

Simply the Easiest Beef Brisket

Awesome recipe. The beer and chilli sauce gave it a unique flavour. Like some other reviewers, I also cut down on the brown sugar to 1/2 cup, because I found the chilli sauce to be innately quite sweet already. Some other modifications I made: 1) I sautéed the onions with 4 cloves of minced garlic first (on stovetop), then browned the brisket together with the garlic/onions before adding the liquids/sauce. I then put it into the oven. 2) Cooked it in a Dutch oven instead - works great. 3) In the last 30 min of cooking, I added chunks of carrots, celery, and zucchini to get in the veggies. 4) I used added 1/2 cup of tomato paste and cut down the chilli sauce to ~1 cup. If you have time, you could do the braising the night before or the morning of, then refrigerate and allow the fat to rise to the top and solidify. Then you can skim off all the solid fat and reheat to serve - makes recipe a lot healthier.

Mushroom Meatloaf

The mushrooms kept the loaf very moist and juicy throughout. I made a few changes: 1) sauteed the onion and mushrooms with a little bit of fresh minced garlic before mixing into the meat, 2) doubled the bread crumbs portion, 3) topped with a glaze made with: ketchup, a dash of balsamic vinegar, sugar, and garlic powder. Turned out delicious and both my husband and I loved it!

Meatball Nirvana

Great recipe! The taste is well-balanced and meatballs are nice and juicy. I used both the milk (as stated in recipe) as well as added an egg for extra moisture. Also used fresh red hot peppers (finely chopped) instead of hot sauce and red pepper flakes. Would definitely keep this recipe and make it again!
