Chicken Tortilla Soup II

So, so good! I've made it twice. The second time I added black beans for extra protien and fiber, but I liked it better without. I cooked the chicken first in the onions and garlic.

I could ALMOST eat this by the spoonful it's so good! I added a little more cumin and garlic powder than the recipe called for, other than that followed the recipe exactly.

Easy Batter Fruit Cobbler

I usually refrain from reviewing recipes when I modify them but this was really good so I wanted to share my changes. I used reduced fat butter, Splenda instead of suger, and skim milk. I used fresh rasberries from my garden. Even my sister, who doesn't like "baked fruit" liked this. The fruit still tasted fresh and the "cobbler" part was delicious. Served it with a dollop of fat free cool whip on top. Yummy!

Asian Lettuce Wraps

California Grilled Veggie Sandwich

When I was putting this together I was thinking,"There's no way all those reviewers were right. How could all these vegetables possibly rate five stars?" I mean, desserts are worth five stars, but vegetables? Well, I was wrong and the other reviewers were right. This was SO GOOD! It made vegetables worth eating.

Amazing Pork Tenderloin in the Slow Cooker

This recipe totally lives up to its name. It was very easy to put together, made the house smell great all day, and tasted incredible. It did take longer than the recipe said to cook--almost six hours instead of four until it was really tender.

Rich and Creamy Tomato Basil Soup

I was trying to replicate a thick, creamy tomato soup I had in a restaurant yesterday. This wasn't thick enough to quite match the restaurant version but it was still really, really good! But honestly, what could possibly taste bad with that much butter and cream?

Christmas Brunch Casserole
