Nonalco Punch

This recipe was great as a starting base for the party punch I made. I adjusted it pretty heavily for a large crowd & also tweaked it a bit for my own personal taste. I used a 2 liter of Ginger Ale, 64 oz Pineapple Juice, 64 oz Cranberry/Pomagranate juice, 2 oz Almond Extract (YES, you read that right...that's one FULL bottle of Almond Extract), and 1 Cup of Grenadine (in place of added sugar). I love the unique flavor that Almond Extract gives to this punch but as I was following the recipe I just wasn't tasting it so I added & added until I found the ratio I liked. This punch is NOT sweet enough without added sweetener (either sugar or in my case, Grenadine) as some have said. The cranberry is much too tart to not add anything extra. My adjustments will serve about 25 - 30 people an 8 oz cup. Make more if you think people will want more than one glass...and they most likely will.

Grilled Mongolian Pork Chops

Visually this should receive 5 stars but because I wasn't very impressed with the finished product I had to knock it back to 3 stars. The sauce was delicious but the meat was not overly flavorful. My advice would be to make extra sauce for dipping. Pork is so dense that it's difficult for marinades to soak through very deep and that was the problem with this (and all pork dishes) in my opinion. It looked sooooo good when it came off the grill but the flavor was a disappointment.

Unbelievable Squash Casserole

This truly is an UNBELIEVABLY good casserole. Made it for my non squash loving family and they all gushed over how delicious it was. Only change I made was to add some real crumbled bacon bits to the topping just because I had some and it sounded good. I will definitley make this again. It's the perfect side dish for a nice comforting meal.

Blueberry Cream Muffins

These muffins were amazing! I made a few small changes: added an extra cup of blueberries (fresh), added 1 cup brown sugar (since some reviews said they weren't sweet enough, and I would have agreed had I not added the cup of brown sugar), and I used only 1/2 cup oil and substituted 1/2 cup applesuace. It yielded exactly what it said it would yield and these baked up perfectly in 20 minutes! The batter seemed thick & heavy but they turned out light & moist and have gotten tons of compliments. I will make these again & again.
