Cake Waffle Me!
About this Cook
I love Jesus, I love my husband, I love cooking for our family, and I can't wait to have little ones to cook with me. :)
My favorite things to cook
New variations on old favorites. Economic recipes. Anything polenta. Anything without a cream soup in it. Anything with kale or spinach. Anything with salty mixed with sweet. Anything made with whatever I got in the fridge.
My favorite family cooking traditions
My first kitchen experience was with my older sister when we were little. We liked loading the bread machine at night so we could have a hot loaf of bread in the morning. My next one was with my mom in her Rachel Ray phase. We cooked through half of her 30 minute meals book!!
My cooking triumphs
My Casserole Algorithm. Feeding everyone for less than a dollar per person.
My cooking tragedies
Misread the temperature and baked a pan of brownies for an hour in an oven 100 degrees too hot. It took 2 weeks of soaking to clean out the pan.

Butternut Mascarpone Gnocchi
You can use pumpkin puree and ricotta in this recipe (substitutions for butternut and mascarpone) and it will be terrific. Don't be worried about not having sage. I didn't have any, and it turned out so mouth-wateringly creamy, salty, crispy that I didn't miss it! Served it with my fav. veggie side dish: garlic bread. :O...

Curry Pumpkin Soup
Just made a half recipe tonight and eyeballed all the ingredients, and it still turned out good! My curry spice was very hot so the soup was spicy. I also used heavy cream, boy was it rich and filling!

Cucumber Sandwich
Most satisfying veg sandwich I've tried, even missing 4 of the veggies ingredients! Where I live, avocados, lettuce, sprouts, pepperoncini and cream cheese are not available at all. So my sandwich only had onions, tomatoes and cucumbers, and my "cream cheese" was just yogurt with all the whey liquid strained out, and it was STILL DELICIOUS. Which proves the power of simple seasonings like S&P, oil & vinegar. Thank God for this fantastic combo!
