Big Soft Ginger Cookies

These are DELICIOUS. I used 1 tsp fresh ginger and 1 tsp ground ginger. I used a heaping tsp of cinnamon. I used butter instead of margarine. Bake time was 10-12 minutes. Important to flatten the cookie.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

This is so delicious. I did not puree it, instead I left it as a stew. The flavors are wonderful. I was hesitant about having the apple in there, but I loved it and would actually add a second apple next time I make it.

Zucchini Patties

I blotted the shredded zucchini, added bread crumbs to the mixture, rolled the formed patties in bread crumbs, and made sure the oil was hot before putting in the pan. Also, I added red pepper flakes, salt, pepper, and parsley to the mixture.

Basic Biscuits

Really delicious. I have made these several times and they come out slightly crispy on the outside, but are fluffy and dense on the inside. I also substituted some of the all-purpose flour with whole wheat flour and they came out great.

Cranberry Orange Cookies

Spectacular cookies. WOW, such amazing flavors. I used the juice of one whole orange (for the batter and icing) and all of the zest from the orange, using most for the batter and about a half teaspoon for the icing. Otherwise, I followed the directions, cooked about 12-13 minutes until browned and put them on a cooling rack--came out perfect. Didn't really need the icing, but it's tasty too. Also tried adding dark chocolate chips to a fourth of the batter--they still tasted good but the original flavors by themselves were AMAZING just as they were..

Iced Pumpkin Cookies

Wow, these are fantastic. I followed others' suggestions and used an entire 15 oz can of pumpkin, and used half brown sugar and half white sugar for the batter. They came out with the consistency of pumpkin bread, and with the icing they are amazing!

Oatmeal Banana Cupcakes

Delicious. I used 1/2 cup honey and 3/4 cup white sugar instead as others had suggested--this gave a perfect sweetness for me. I sprinkled each muffin with cinnamon and sugar. I used three overripe bananas, about 1-1/4 cup, and the muffins turned out super moist!

Sweet, Sticky and Spicy Chicken

I loved the flavor of this dish! I doubled the sauce and it was enough to coat the chicken. Followed others' advice and dredged the chicken in flour prior to cooking in the oil.

Grandma Gudgel's Black Bottom Cupcakes

These were so delicious. I followed some other reviews and used a 1/3 cup of cocoa (made it more chocolatey). I poured 16 cupcakes into muffin cups, which I baked for about 18 minutes and they came out perfectly.
