Big Soft Ginger Cookies

These are DELICIOUS. I used 1 tsp fresh ginger and 1 tsp ground ginger. I used a heaping tsp of cinnamon. I used butter instead of margarine. Bake time was 10-12 minutes. Important to flatten the cookie.

Sweet Potato, Carrot, Apple, and Red Lentil Soup

This is so delicious. I did not puree it, instead I left it as a stew. The flavors are wonderful. I was hesitant about having the apple in there, but I loved it and would actually add a second apple next time I make it.

Zucchini Patties

I blotted the shredded zucchini, added bread crumbs to the mixture, rolled the formed patties in bread crumbs, and made sure the oil was hot before putting in the pan. Also, I added red pepper flakes, salt, pepper, and parsley to the mixture.

Basic Biscuits

Really delicious. I have made these several times and they come out slightly crispy on the outside, but are fluffy and dense on the inside. I also substituted some of the all-purpose flour with whole wheat flour and they came out great.

Cranberry Orange Cookies

Spectacular cookies. WOW, such amazing flavors. I used the juice of one whole orange (for the batter and icing) and all of the zest from the orange, using most for the batter and about a half teaspoon for the icing. Otherwise, I followed the directions, cooked about 12-13 minutes until browned and put them on a cooling rack--came out perfect. Didn't really need the icing, but it's tasty too. Also tried adding dark chocolate chips to a fourth of the batter--they still tasted good but the original flavors by themselves were AMAZING just as they were..
