You don't have to refrigerate the yolk mixture before putting the mascarpone in. In fact, I always [I've made this many times] put the mascarpone in while the yolk mixture is still hot. It's much easier to mix then. And then I just let it sit (unrefrigerated) while I prepare the rest of the dessert. And, yes, agreed, double the rum; & use real espresso. An hour in the fridge is enough to let it soak a bit, but it definitely tastes better after 24 hours.
