Refried Beans Without the Refry

Gotta give 5 stars! These are truly fantastic and couldn't be any more simple! When the beans were done and supper was almost ready we decided to try them with a couple of tortilla chips while other stuff was finishing up - we could hardly stop eating them so that I could serve them for supper!! DH loves refried beans but I've only ever served canned. He was thrilled. Thanks so much for sharing the recipe! Oh - a tip: I started a little short on time, so to jumpstart things a little I followed part of the "quick soak" instructions on the bean package (which is to boil the beans for 2 minutes...). I pre measured the water to boil them in according to what I would need for this recipe, boiled for the 2 mins, then put everything into the hot crock pot. They were done in about 5.5 hrs.

Amy's Cilantro Cream Sauce

Very nice. Served with "Beef and Bean Chimichangas" from this site - excellent together! We dipped a few tortilla chips while waiting for the rest of our meal to bake - enjoyed it as a dip although I might caution to start with 1/2 tsp celery salt and adjust up to personal taste, especially if serving as a dip with something salty like chips. I like my food very well seasoned, but 1 tsp celery salt was borderline too much salt even for me. It was perfect to drizzle over the baked chimis and the lettuce/tomato/onion I served with them though! Thanks for sharing the recipe!

Beef and Bean Chimichangas

Very good, will make again. 5 stars for the idea to bake instead of deep fry. Served with "Amy's Cilantro Cream Sauce" and "Refried Beans Without the Refry", both recipes from this site. I changed up the filling quite a bit as I didn't want these to taste like taco/burrito/enchilada - seasoned beef with S&P, 6-8 cloves garlic, onion, and a little shake of chili powder and cumin. Only used meat and beans for filling. I will do it this way next time also. Served corn and extra beans on the side, along with usual toppings and cilantro cream sauce. Excellent. Thanks for sharing.

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

Most perfect hard-boiled egg ever. Bright yellow yolks with no gray ring, perfectly cooked, and I peeled a dozen in less than 2 minutes. Call it voodoo if you must, your eggs will still be perfect.

Quinoa Tabbouleh

Delicious. I made this on a Sunday afternoon to have on hand for the coming week's lunches, but can't stop taking a few more bites when I go past the fridge! Kids loved it and requested it in their lunches also. I added halved, pitted kalamatas. Thanks for sharing the recipe!

Chicken Tikka Masala

I will start on a good note because I was able to save this just in the nick of time. Family loved this and I'd put it on our favorites list, with modifications. I learned my lesson the one time I didn't read a bunch of reviews before starting....holy SALT!! What in the world??! At first I thought it would be okay because the marinade wouldn't all be consumed with all that salt. Well, the chicken soaked up quite a bit of the marinade after only 1.5 hours so I decided to read some reviews before putting more salt in the sauce. I decided not to add any more, and next time I will reduce the amount in the marinade as well (and we're not afraid of salt around here usually). I can't in good conscience rate this recipe any higher as written, but I do appreciate the author sharing it.

Pantry Curried Quinoa with Garbanzo Beans and Roasted Peppers

Outstanding flavors. After the allotted time there was extra liquid as mentioned by another reviewer, I left the pot on med-low with the lid off and evaporated the extra, stirring a few times. Roasted my own peppers and a couple heads of garlic, then squeezed a few cloves into the dish since we love garlic. The crunch of the nuts is necessary for some variation, so if you don't prefers nuts maybe add something else with some crunch. Served cold, this would be great with diced cucumber. I also thought it could be brightened up just a bit, so we served with crumbled feta atop. Will definitely make this again and look forward to having cold leftovers.

Roasted Yam and Kale Salad

Enjoyed these flavors together. Don't over-roast the yams, I took mine out when they had the slightest bite to them, perfect. My kale was a little wet (had to try to dry it...) but that is my fault for trying a slightly different procedure. We prefer our dishes fairly highly seasoned, so added extra garlic, vinegar, and doubled the thyme. Served with feta and walnuts as suggested by reviewer, an improvement IMO. I might prefer this warm. Thanks for the recipe!

Stuffed Mushrooms IV

Using sausage (either pork or turkey) is a huge improvement over ground beef. Also improved by omitting all butter. I pressed a mixture of panko and fresh grated Parmesan onto the top of each filled mushroom then lightly sprayed tops with cooking spray to get a nice crunchy top. Have made several times; never any left over

Grilled Chicken Burgers

These tasted okay and I'm glad I made them, may family enjoyed them. But....the Old Bay really dominates the entire flavor profile and I guess I don't prefer that, especially in a chicken recipe.

Thick-Style Lebanese Garlic Sauce

Have made several times since recently discovering this recipe. Delicious. I'm finding lots of ways to use (like brush on veggies, or bread before grilling). The first time I made it I peeled whole head of garlic, then decided to only use 1/2-2/3 as much oil as the recipe recommends, and adjusted the salt accordingly. My whole family loved it, so that's also what I've continued to do. The procedure recommended by Cremefraiche seems crucial. I throw all the garlic cloves in (whole, not minced) with the coarse salt and use my immersion blender to get that fairly 'paste-y' before even starting to add oil. Then alternate oil/lemon juice. I didn't follow the procedure once and could NOT get it to thicken no matter what I did. I also believe those who say the vessel size is crucial, it must be a narrow vessel.

Scalloped Corn

A lot of scalloped corn/corn casserole recipes call for a HALF CUP of butter, including this one. In case anyone is thinking of not doing that, I made this recipe with light sour cream, EggBeaters, no extra sugar, and 2T butter for the flavor. Baked in 11x7 dish til the center was set. Fantastic. Try it!
