Cola Pot Roast I

Ahhhhhmazing! Made some homemade noodles with it (from this site--Chuck Roast with Homemade Noodles). I didn't brown the meat, just threw everything into the slow cooker and cooked it all day. Very tender, and very flavorful! Thanks!!

Quick and Easy Pimento Cheese

My first batch turned out just "OK" because I used real mayo like some others suggested. I made it again, and instead used the salad dressing (and also added fresh ground pepper and a bit of garlic) and it was GREAT! Thanks for the recipe :)

Classic Fish and Chips

Awesome...with just a few modifications :) I used rice flour (for a delicate-but-crispy texture) and substituted half of the milk for sprite (you can also use beer). The batter comes out of the frier crispy on the outside and tender and flavorful on the inside. Thanks!! :)

Crab Stuffed Manicotti

I went middle of the road on this one because the crab stuffing was excellent, but the alfredo sauce with it was waaaay too rich to go with it (my little one even gagged as he ate it, but said it was good). I would suggest making the shells with maybe a lighter garlic sauce instead. Or even a vodka sauce.

Salisbury Steak

Ahhh-mazing! My son wants this for his birthday now! Only change I made was double the sauce and use part french onion soup and part GOLDEN mushroom soup (not the creamy variety). Also added a bit of garlic and parsley. Thanks for the wonderful recipe!!! :)

Strawberry/Rhubarb Crumb Pie

Pretty good, but it was super watery. The rhubarb was also tough, though it may have been because it was frozen (can't find fresh this time of year). Next time, I think I will flash boil the rhubarb a few minutes. Thanks for the recipe!

Red Onion and Goat Cheese Tart

This was a hit at my mom's birthday party! I made 2, and used 5 large onions, so I don't think it needs as many as indicated. (I also sauteed them with garlic, salt and pepper--sliced) I also added garlic and herbs to the egg/cream mixture. I made one of them with the goat cheese, and the other with Havarti cheese, and they both turned out amazing. So, if you don't care for the goat cheese, try the Havarti--it was excellent!

My Sister's Favorite Potato Salad...Ever

Very good salad...with a few changes I made. I used miracle whip (1/4 C) and sour cream (1 C) instead of the mayo (makes it lighter and fluffier and adds zest) and regular mustard instead of Dijon. Also, I didn't add the vinegar to the dressing, but instead sprinkled it over the hot potatoes when they were done cooking. That way, it soaks into the potatoes to give them more flavor. Also added diced onion and garlic powder along with some freshly ground pepper. Yummy!

Apple Crumb Pie

Excellent recipe. But, the first time I made it using freshly sliced apples, it came out extremely watery and ran everywhere. When I made it again, I first par-boiled the apples (1 1/2 minutes in boiling water, then a cold water bath to cool them), then I laid them on a cookie sheet lined with paper towels to drain. (By the way, if you want to freeze your orchard-fresh apples for pies, treat them with Fruit Fresh first and then do them this way as well and then pack in freezer bags) Came out perfect! Not watery, stayed together when sliced--amazing! I did not add the nuts or raisins, as my boys don't like them. Thanks for the recipe!!

Au Gratin Party Potatoes

Amazing!! I scaled this down (quite a bit!) and added spices (garlic, pepper, salt, paprika) and then layered in some onions. I also sliced instead of diced my potatoes and precooked them. SO creamy and great!! Thanks!!

Taco Seasoning III

Even better than the packages! I didn't have dried onion, so i used really finely minced fresh onion, and it was PERFECT. Also added a dab more cumin, because we love it. Thanks for the recipe!! I'll never buy another packet of taco seasoning again! ;)

Amish Bread

Very good bread! TIP: If your machine has a dough cycle, do the bread on that first, then do the full bread cycle--that way the machine will turn itself off after it rises the first time, and you can select the full bread cycle the second go-round! ;) UPDATE: I actually found the bread to be much better texture-wise by just letting it go through the whole cycle the first time. It definately doesn't need the second rising in my opinion.

Scalloped Potatoes I

Overall good taste. My potatoes were still crunchy, so I think next time I will pre-boil them a bit. Also, I added more shredded cheese in between the layers, in addition to some herbs (parsley, basil & garlic). Very tasty, thanks!

Beef Tamales

Great recipe. I lost the recipe I got from my friend years ago, and this one gave me a good guide. The only difference was my friend added tomato paste and sauce to her 'gravy' that is added to the meat. Also, when you steam the tamales, don't use water but use beef broth with some garlic cloves and chiles in it. It will give them even more flavor, you'd be surprised! Thanks for the recipe!
