Fluffy Pancakes

This is a no-fail, positively perfect recipe! Sometimes I even add vanilla and cinnamon for that "rich" and decadent flavor. Thanks for the recipe, it's my go-to for pancakes!! :)

Best Chocolate Chip Cookies

Really good as far as taste goes. However, they got really flat as soon as I took them out of the oven. Next time I'll use baking powder instead of baking soda. It helps keep them from flattening out and they are easier to store (don't fall apart as much). Otherwise, great recipe, thanks!

Quebecois Maple Cream Pie

If you like simple, not over-done custard pies, do NOT pass this one up! It really was delicious, especially with some freshly grated nutmeg mixed in, and topped with maple whipped cream. So simple but so elegant and wonderful! Thanks!!

Savory Crab Stuffed Mushrooms

These are a really good base recipe, but I gave it 4 stars because it needed modifications. I added more seasoning (fresh minced garlic, oregano, salt and pepper) and added 1/4 tsp more dill (otherwise it is hardly noticeable). I also added 2 TB of cream cheese to give it a richer, creamier texture. Make sure to use quality crabmeat to avoid any "fishy" taste.

Chicken Enchilada Soup I

Really good! I doubled the recipe, but kept the enchilada sauce at one cup and just added a can of diced tomatoes. I boiled my chicken, so I just used the broth from that. Also toasted up some corn tortilla strips in the oven (sprayed with olive oil, then broiled 2-3 mins) for topping. OH yea, and I added a bag of frozen sweet corn and a can of rinsed black beans...MMMMMM!! GREAT!! Thankx!

Marcia's Banana Bread

Good banana bread! I substituted banana flavored yogurt for the sour cream, and it was excellent, very banana-ey! I also made some "icing" for it, with mashed bananas, powdered sugar, and a touch of milk. Yummmm!

County Fair Corn Dogs

All I can say is.....mmmm good!! I didn't use the bacon fat (I thought frying was enough grease!) but used honey in place of it. It added a nice extra level of sweetness to it, but not a lot. I even used wheat flour, and they turned out wonderful! OH, and a tip: to get the batter to stick to the hot dogs better, roll them in cornstarch and brush off the excess before dipping into the batter. Makes the batter really stick, and works better than drying! Great recipe, thanks!!! :)

Aw-some Cole Slaw

This was OK. It definately needs some tweaking. I think next time I'll add more seasoning (salt, celery seed, pepper). We also found the dressing to not be quite enough. It was wet, but watery, not creamy. Good start for a recipe though.

Creamy Au Gratin Potatoes

Really good! Made with organic potatoes, which have a sweeter taste because they have no chemicals, so I doubled the cheese. Added breadcrumbs tossed with salt, paprika and a drizzle of olive oil, sprinkled on top and baked. Delish!!

Simple, Classic Chicken Potpie

I was looking for a recipe without the bland canned soups in it, and this hit the spot! It was delicious, and my family just about fell off their chairs out of pure joy it was so good! I did add some granulated garlic and oregano to give it additional flavor. Thanks for the recipe!!

Brooke's Best Bombshell Brownies

Absolutely the best brownie recipe I have ever sunk my teeth into! Even my 6 year old who doesn't care for chocolate couldn't get enough of them! I added some semisweet chocolate chips to it, just to cut the sweetness a little. What an amazing brownie recipe! I'll never buy boxed mix again!!
