So this was my first attempt EVER at a cheesecake. It was INCREDIBLE! No cracks, no flops....just great tasting cheesecake.
I followed the direct pretty darn close. I was really worried I would mess it up. Especially after reading all the comments about cracking. There was a lot of conflicting advice. Mixing: I used a hand mixer. At every step I mixed until just smooth. Baking: This recipe said nothing about a water bath. My Mom and the "Cheesecake basics" both mentioned this. This is my only deviation from the instructions, turns out I did it wrong anyway. I placed the cheesecake pan in a shallow water bath and used cold water. It is supposed to be deep and hot water. But I guess it didn't make a difference.
I will say in the future, I may modify the crust as I found it a little plain. The cheesecake did brown a little on top, but not burned.
