Spicy Cuban Mojo Chicken with Mango-Avocado Salsa

Not that difficult to make and absolutely delicious! The leftovers of mango and avocado salsa make a great dip for chips.

Cajun Roasted Pork Loin

I made this last night and it was pretty tasty (the smell was divine!) I couldn not bring myself to waste all the vegetables after deglazing the pan, they were not overcooked, so I pureed them into the gravy with my blender. Next time I will try saving some whole to serve on the side.

Whitechapel Shepherd's Pie

I used Irish cheddar instead of Parmesan, and mixed it in with the potatoes. I also added a small amount of fennel seed, and that really made the dish pop. It looks and smells very nice, and was a big success at the table. A keeper recipe, and quite affordable. Having a food processor makes it easy to prepare.

I messed with the recipe a tiny bit. First, I used the leftovers of mashed potatoes I had made to cover a shepherd's pie, so there was some Irish cheddar mixed in. Second, I used my beloved stick (immersion) blender to smooth the cabbage mix, but left chunks to keep a good texture. Third, i thought it was a little bland (maybe I should have used kale instead of cabbage?), so I added more mace, a little bit of granulated onion, and a bit of celery salt. Leaving it to wait overnight made it even better, lovely blend of flavours.

Vietnamese Beef Pho

I was extremely happy with this recipe. I tried a variation, using chicken broth and cooking thinly sliced chicken during the last 10 minutes before serving. Everybody loved the meal.
