Chef John's Spaghetti alla Carbonara

Surprising! With so few ingredients, I just didn't see that this was going to be so good. I have a tried and true cream based pasta carbonara sauce that we all just love. I was curious about this recipe since it's entirely different, and knowing that, I didn't expect one to replace the other. This is a lighter, but still flavorful dish that is completely different. The dosage of pepper is very distinct and the egg mixture does make a nice cream sauce, despite my hesitation that it would. Will definitely keep this recipe and do like that it's about 2/3rds the calories per serving of my other pasta carbonara recipe.

Orange Tilapia

First of all -- Don't discard the mainade! Pour it in pan, boil it and reduce it slighly for a few minutes before adding a pinch of cornstarch to thicken it up to a glaze. I drizzled this over my end product and voila! Amazing. And it adds the mildest flavor or orange. I'm not sure you'd taste any orange otherwise and I marinated it over night. (Would I even bother wth that step next time? Hmmmm...) The grocery store did not have tilapia at the tme, so I picked up a pound of filet of sole. Worked great. Sole is super thin, so I broiled it start to finish for about 5 minutes. Toasts the crust up nicely as well. If you're a garlic lover -- triple it. If you're a salt person, this will need a sprinkling of that as well at the end. A really wonderful and light fish dinner.

Roxie's Bran Muffins

Delicious. Easy. Low Cal. Nutrient Rich. Did I say delicious? These are all of my favorite things. Made the muffins exactly as written. Will be keeping this recipe for sure. Fill muffin cups all the way to the top. They don't rise more than 1/2". Mine were done in about 17 minutes. Definitely don't want to over cook them.

Ultimate Chocolate Dessert

This exquisite recipe cannot possibly be any easier to make than it is. I was thoroughly impressed with the end result. No need to modify in any way to achieve perfection. Would not hesitate to serve to guests over for dinner. Be sure to use a nice sharp knife when chopping your chocolate into chards or you'll end up with a very fatigued hand. YUMMY!

Salisbury Steak with Mushrooms

This is simply the most delicious low-calorie comfort food around. I make it with ground chicken instead of ground beef to save on fat and calories even more and it's AMAZING! The rich beef gravy is excellent over mashed potatoes on the side. Don't change a thing! The recipe is excellent as it stands. Whether or not to saute the onions and mushrooms before the "simmer in broth" step is just personal preference. Winner!

Broiled Tilapia Parmesan

This is really deliciously and can be easily made much lower in calories with low fat mayonnaise. (I like Best Foods version). I also agree with the other reviewers that some Old Bay seasoning or your favorite seasoning is a must. Somewhat bland without it. I didn't bother with flipping the fillets at all. Just pulled them a little further away from the broiler burner and let this cook for 5-6 minutes on one side before adding the mayo/butter/cheese mix. Overall, this recipe is fast, it's easy, it can be low cal -- I LOVE IT!

Turkey Veggie Meatloaf Cups

I've been searching for better tasting "healthy" food and this one is a keeper. It's a great low-calorie hybrid between the all-meat loaf and something like a boca burger. In fact, after making these, I think next time I'll form them like hamburger patties and try baking them that way. You can vary the sauce topping to your liking. I tried something different on each "row" in the pan. I did a row with BBQ sauce, one with ketchup, one with plum sauce and one with a sweet ginger sauce. Fun to test your favorites, but again, I will try making them next time with NO sauce in patty shapes and then adding what I want on after they are cooked. Important to only PULSE the food processor so you have control and avoid the liquid stage of the veggies. The only addition I made was adding a Tbsp of minced garlic and 1/2 tsp salt. I could tell by the lack of seasonings in the recipe that I would want to add something. GREAT recipe!

Italian Drunken Noodles

This is a wonderful "light" pasta meal that is hearty and robust, yet lighter on the calories. I followed the recipe exactly except I chose chicken sweet italian sausage to cut the fat even more. Delish!

Chef John's Coq Au Vin

I use a lot of white wine while cooking, but I've not been a big fan of red wine sauces in the past. This is the first time I was completely pleased with a red wine recipe. Be prepared for a lot of steps to complete this coq au vin properly. I didn't notice the "total time to prepare" until after I started on it one night. Dinner was served much later than expected as a result, but it was well worth the wait. An excellent dish overall. Not hard to do, but again time and effort required to complete it. My sauce after the baking was very watery. I will allow even more time in the future for the sauce reductions.

PJ's Sweet Potato Mash

I love sweet potatoes anyway, but this recipe is SO good and SO easy!! No worries about the horseradish overpowering the potatoes. It's adds a nice touch but it doesn't scream horseradish. I started off adding in about the half the recommended amount and when it was safe that it wouldn't kill the dish with it, I ended up using the full amount. Wonderful!

Pasta with Italian Sausage and Pumpkin Sauce

This was an interesting mix of ingredients for a sauce, so I felt compelled to try it. I followed the recipe completely and it wasn't bad. Flavors blended well and it's a nice change from a normal red or white sauce. However --- the recipe does make a LOT and the sauce is very very rich. Had a plate of it and was feeling stuffed. An hour later, I can't even fathom wanting more of that for leftovers tomorrow. Just too heavy for me, so I won't be making this again.

Chicken Breasts with Chipotle Green Onion Gravy

This is a good gateway recipe to get you to experiment with pan sauces. I personally didn't care for the chipotle flavor in this sauce, but that doesn't mean it isn't a good recipe that can't be easily modified for any other seasonings you might want to try.

Caramel Shortbread Squares

These are really easy, but you MUST allow time between each step for that layer to cool completely. SUPER sweet even using semi-sweet chocolate, so cut them small. I sprinkled sea salt on top of the chocolate before it set up, so mine were salted caramel shortbread bars. People LOVED them! And me too!

Creamy Kielbasa and Potato Soup

This is a really tasty and simple soup to make even on a weeknight. Shockingly, everyone in the house liked it which is an accomplishment in and of iteself. I did find the broth too thin at the end and ended up throwing in some shredded cheese to thicken it up. Also added a few more hearty bits to make it chunkier (corn and carrots). Will be keeping this on file for the future!

Best Brownies

I mixed the ingredients together easily with just a wooden spoon and after 25 minutes in the oven, they were a-w-e-s-o-m-e. I was looking for a replacement to my previous "Best Ever" brownie recipe that I got off the back of a Nestle Choco-Bake box. It was my "go to" for years, but Choco-Bake is no longer available in stores and substitutions for it were not the same. This recipe was a welcome relief and completely comparable to my old favorite. THANKS!

Based on other reviews, I eased back on the spices by cutting the 5 spices at the end of the ingredient list out entirely. The rest was done as written and I loved these burgers.

Grilled Marinated Salmon

This is very good and fast to prepare. Can pan fry salmon too. If you cook the marinade down to a sauce, pour it sparingly over the salmon because it's very strong. A drizzle and it's perfect!
