Sweet Corn Bread

Wow! Quite good! I used one reviewer's suggestion and added one cup of creamed corn, cutting the sour cream by half. Delicious, moist, and cake-like texture. Will definitely make this again.

Sweet Grilled Cheese

When I was a kid, my family would always serve sliced cheddar with our pancakes, and the similar sweet-salty combination in this recipe made me run to the kitchen and make it right away. Wow! I would never have thought these two ingredients would go together, but it was so delicious. I used whole wheat bread and cheddar cheese. I will definitely make this again.

Grilled Cheese, Pickle and Vidalia Onion Sandwich

Holy mother of delicious. I omitted the onion, and added a swipe of cream cheese on one side as a previous reviewer suggested. I also used bead and butter pickles and used sharp cheddar. My boyfriend couldn't get enough!

Refried Bean Enchiladas

Very good. I made them for my boyfriend and he finished the entire pan in one night! I made it again two days later with corn tortillas, a packet of taco seasoning and omitted the cottage cheese. They were even better, but both versions are delicious.

Chicken Rice Casserole

It is had to rate this dish, because my boyfriend and I loved certain aspects of it and didn't care for others. We didn't care for the mayo--I would probably add two containers of the soup concentrate instead--but we loved the unexpected crunch of the water chestnuts and the crackers crumbs on top (we used Ritz instead). I gave it four stars, he voted two, so I compromised on three. However, if you're a mayo fan and love rich comfort food, this might be great for you.

Grandma's Green Bean Casserole

This dish was excellent. I had a hard time making green bean casserole without french onions, however, so I added about a cup to the casserole itself, and also sprinkled some on top to brown five minutes before taking it out of the oven. Success! Definitely putting this onto my holiday menus from now on.

Gluten-Free Yellow Cake

A friend who recently found out he is gluten-intolerant had a birthday party last week. It has been difficult for him, as he's a pizza and pasta type of guy who hates gluten-free food, as are all of his friends. I made this cake with a homemade buttercream frosting and lined it with berries. The men at the party devoured it in less than twenty minutes! I told them afterward that it was gluten-free, and they couldn't believe it. That night I came home and ended up making cupcakes with the leftover ingredients for my boyfriend, who went crazy for them. I will definitely make this again!
