Jalapeno Popper Spread

Took this to a party last night and it was a huge success. Realized at the last minute I only had Miracle Whip so used a half and half mix of Miracle Whip and sour cream. Also added all of the juice from the jalapenos and green chilies because I was putting it in a crockpot and didn't want it to dry out. I mixed all of the Parmesan into it and it lasted great for hours.

Chocolate Trifle

This recipe got rave reviews at a potluck. I used a low-fat brownie mix, fat-free Sweetened Condensed milk and Cool Whip Lite and it still tasted great! Used another reviewers suggestion and topped w/ mini chocolate chips. I didn't own a Trifle dish but found one at Walmart for $6.97.

Linda's Monster Cookies

This is my favorite cookie recipe! I've been making it for about 6 yrs. and I always get rave reviews. I substitute peanut butter for the margarine and make 1/2 recipe. I use the med. Pampered Chef scoop (about 2 T.) for each cookie and bake for 11 min.

Apple-Glazed Pork Chops

Very nice fall recipe. I made very few changes. I was a little light on the rosemary and thyme since they're not my favorite herbs. I used a local apple cider with lots of flavor and I also added about 1 C. dried cranberries to the fruit mixture. Pork chops were moist and flavor was very good.

Norway's Best Pepper Cookies

A different little cookie but very good. You experience spicyness after your last bite. My child took this to school for Heritage day and even the kids liked them.

Miso Soup

I frequently make Miso soup and found this to be the perfect amount of miso and dashi. I did add two nori seaweed sheets torn into squares. Great additions would also be sweet potatoes or straw mushrooms.

Baked Oatmeal Squares

These bars were moist, flavorful and fantastic! I can see endless variations to this basic recipe! I did make a few changes--I doubled it, replaced half of the sugar with brown sugar and replaced half of the milk with buttermilk. I reduced vegetable oil by half and added a little more milk. I also grabbed the pumpkin pie spice instead of the cinnamon but it was a good mistake. We topped with maple syrup and the kids had peanut butter on top. Excellent!

Lemon Barbeque Meatloaf

My normal meatloaf recipe is the Amish meatloaf from this site but I wanted to try something different. My kids (3,6,&9) ate every last bite of the lemon meatloaf which is uncommon for them. I guess I'm making the switch to this as my favorite as well. I did omit the cloves but otherwise made it according to the recipe. I may consider making a little more sauce next time, it was very good!

Mixed Seafood Curry

Excellent recipe! I doubled it and used a 4oz. can of Masaman curry paste. I served it over Japanese sweet rice. Husband thought it could have been more spicy so I may experiment with a different curry paste next time but we both loved the flavor.

Six Week Bran Muffins

My mom used to make these when I was a kid so I came to the site searching for this exact recipe. They are excellent muffins and just how I remembered them! I do add a little extra buttermilk after the batter has been sitting in the fridge awhile or I find they get a little dry.

Peanut Butter Cup Brownies

Very fast & easy. I used 2 inch foil (mini) muffin cups & put them in a jelly roll pan. Recipe made 25 this size, baked 32 min. I also added 1 M&M to the top of each for a little color after they came out. Very yummy! Plus w/ the M&M's you can change the color to match the season or holiday!

Boiled Chicken

Great time saver! I used my chopper & shredded carrots, onion, celery, green pepper, added some garlic, pepper, & chicken boullion. Then I added 3lbs. of chicken breast, water to cover & cooked about 1 hour. I used 1lb. for chicken salad, 1lb. for a casserole & the rest I cut up, added some noodles & had in the soup it had cooked in!

Minute Tomato Soup with Tortellini

Great soup and easy! I did make some changes though. I used a family size can of tomato soup plus a can of Campbell's Pepper Jack soup. Instead of water I used a can of Beef Broth and milk. I used 1 t. each of the oregano, basil, and parsley which I thought was plenty. I also added a can of diced tomatoes, extra tortellini, & about 1/2 C. grated parmesan. The Pepper Jack soup made it a bit spicy but just right for our family!

Black Halloween Punch

The punch tasted great! It was a little more brown then black though. To make it more fun I added ice cubes with gummy worms froze in the middle. The cubes were a little easier than doing the hand and easier to transport to school or parties.
