Valencian Savory Empanadas

This recipe was really yummy. I am Puerto Rican and make this a number of different ways. Usually I use ground beef. I cook the ground beef, add chopped green olives (just a few), use some adobo seasoning and sazon packets (can be found in the international food section of your supermarket, and finally use some sofrito ( 1 onion, cilantro, peppers, garlic and culantro blended with a little olive oil which is the base for most of our cooking) and this is my filling. Of course drain the ground beef. I also buy the dough in the frozen section. The goya ones work well. If you like you can add shredded cheese to the ground beef as well.

These are good ingredients... In my sofrito I always use two bunches of culantro not to be confused with cilantro, 2 bunches of cilantro, at least 12 cloves of garlic, an onion, and 4 peppers (2 red and 2green) I omit salt, pepper, and tomatoes since a lot of puerto Rican dishes have a lot of different seasoning anyway.

Chicken Marsala II

It was soooo good. Thanks so much. Did add some of the bacon and added some chicken stock to dilute taste of alcohol. Amazing and the kids and hubby loved it!!! I will say I was triple the sauce recipe though.

Chewy Chocolate Chip Oatmeal Cookies

I went to my sister in law's house and she gave me some oatmeal chocolate chip cookies she made from a box so it inspired me to make them from scratch. I followed the other reviews and put in 1/4 more flower and /14 more baking powder (didn't have any baking soda) and they came out great. I wanted to make larger cookies so I let these cook for at-least 14 minutes and they came out chewy and were full of flavor. THanks so much.
