Best Carrot Cake Ever

Reviewed: Feb. 28, 2013
I made this for my husband today and it turned out wonderfully! I followed the recipe word for word and didn't have any problems with the cake being too mushy/heavy/dense or it falling in the center like other reviewers. I don’t remember ever liking carrot cake, so this was the first I have made in a LONG time, and it is the first one I remember actually enjoying. This was great by itself (as I munched on the scraps I trimmed off) and it is also great paired with the Cream Cheese Frosting II, also found on this site.

These are amazing! Followed the recipe exactly and they came out perfectly. Make sure to bring to a rolling boiling and then time the minute. Sooo good!

Cream Cheese Frosting II

Reviewed: Jun. 7, 2011
A very yummy frosting! I was happy with the sweetness as I was pairing it with a less sweet apple banana muffin, so it evened out well. The texture was great too! Much more smooth then the butter-cream frostings I have used in the past. I will tweak the amount of sugar I add depending on what I need to do with it in the future, but will definitly be using it again.

Chicken a la King I

Reviewed: Jun. 7, 2011
The recipe is very good as-is! It has a great consistancy and will thicken the longer it cooks. I often substitute canned mushrooms for fresh, add frozen veggies, use cream of mushroom soup and/or omit the pimentos depending on what I have on hand. I always serve this with tea biscuits for a hearty dinner.

Tea Biscuits

Reviewed: Jun. 6, 2011
GREAT biscuit! I make these all the time when I want a nice, light, plain biscuit. They are soo easy and quick to make. They can easily be fancied up by adding cheese, or rasins depending on the use. I often serve them with Chicken a la king soup, they are a great companion! Just one thing to note: be carefull not to over mix or roll to aggresively. The more you work them the tougher they get.

Apple Banana Cupcakes

Reviewed: Jun. 6, 2011
These were just ok following the recipe exactly. Can easily be 4 or 5 stars by making a few changes. I chopped my apples with the skins on for more apple flavour. Filled the muffin cup 3/4 of the way, and topped with a lemon-cream cheese frosting. These are really more of a muffin tho, not a cupcake.
