Pear Crumb Pie

Reviewed: Mar. 12, 2012
Fabulous! I followed the instructions to the letter. When it was warm, we topped it with whipped cream and some left-over Salted Caramel Rum Sauce - Delish! It was really good for breakfast straight from the fridge, too. Will definitely make again. Thanks Cathy!

Coconut (Haupia) and Chocolate Pie

Reviewed: Aug. 25, 2011
I was so excited to make this because it sounded so good and I had all the ingredients. I found it to be a bit too sweet - maybe from too much chocolate in the top layer? I think the next time I make this I will use an Oreo crust lined with banana slices, and leave out the chocolate (I know, it sounds crazy - no chocolate?!?!)

Honey Mustard Grilled Chicken

Super Tasty! I used Worcestershire sauce since I didn't have steak sauce, and I marinated them for about 24 hours. They came out super moist and yummy! Will definitely make again!

Pineapple Fried Rice II

Reviewed: Jun. 3, 2011
Tasty. I used peanut oil, adding the sesame oil at the end, with half the sugar and pepper. If I make it again, I will make a few changes: Fresh minced garlic, and no pepper. I'll probably use chicken, too. It seemed to cover that nice hammy taste a little too much for me.

Ghirardelli Coconut Almond Torte with Chocolate Chips

I made this as written and it was totally delicious. I love that it doesn't contain flour! It actually tasted best served cold - the chocolate flavour came out more.

Chili Chicken

Tasty! I marinated chicken breasts and baked them as I don't have a grill. I also put some of the sauce on broccoli and baked that as well - it turned out Fabulous! Definitely will make again.

Cheese Souffles

Reviewed: Apr. 5, 2011
So good! The only change I made was to use garlic powder instead of mustard powder. I also ended up cooking it about 15 minutes longer than specified and it could have used about 5 minutes more. I can't imagine adding more salt; it was plenty salty with the Tillamook medium cheddar I used. Can't wait to try it with other cheeses! Had to buy mid-sized ramekins to make this - I think I bought the same as the ones in the picture!

Chicken Tortilla Soup I

Reviewed: Feb. 9, 2011
I left out the hominy and oregano, and used dried onions and homemade chili powder with ancho chili spice. Very tasty! I also made a vegetarian version using vegetable broth and chickpeas instead of the chicken for my dh. He said it was perfect!

Hoppin' John

I used leftover ham instead of hocks, black beans cuz I didn't have black-eyed peas, and brown rice. Very tasty served over cornbread, even if my ham chunks were purple, lol. People who review recipes they haven't even made need to get over themselves.

Candy Coated Pecans

So easy and delicious! I made these with the addition of 1/4 tsp cardamom for Christmas gifts. I did not double the coating as in some reviews as I found the coating to be just fine, though they did take a bit longer to cook. Love them! Thanks, Jan!

Peppermint Biscotti

Reviewed: Dec. 19, 2010
These are very good - a bit crumbly, which is why it only gets 4 stars - but they are amazing after dipping in semi-sweet chocolate and sprinkling with extra candy cane. I made two batches for Christmas gifts, and now I'm making a batch for myself 'cuz I find I really want some with my coffee! Thanks Paula :)

Quick, easy, and delicious! I make it in a cast iron pan so I don't dirty up too many dishes. Thanks for the great recipe!

Refried Beans Without the Refry

Reviewed: Mar. 13, 2010
I actually bought a slow cooker just so I could make this recipe :) Per other reviews, I cut the salt to 2 tsp and will probably cut it to 1 tsp, just cuz I'm weird about salt. Otherwise a fantastic recipe that will be a staple in our house. I'm going to make tortilla soup with the left-over broth tomorrow!

Minty Mango Salsa

This was really good. Definitely make it the night before because it is much better after it sits. The only change I made was to use lemon juice instead of lime because I'm allergic to limes. We used some of the leftovers in a spinach salad with feta - very tasty! Thanks Diane

Thai Sweet Sticky Rice With Mango (Khao Neeo Mamuang)

Reviewed: Jul. 5, 2009
This was very yummy! I used brown rice and, after reading other reviews (and personal preference), I cut the sugar to 1/2C, which was perfect. I also added 1/4 tsp of cardamom. This as best fresh and warm, or cold the next day. I will be making this again and again. Thanks Michelle!

Tuna Lime Tostadas

Reviewed: Apr. 29, 2009
Very tasty and filling! I did change a few things - I used about 4 green onions instead of 1/2 a red or yellow, and 1/4 tsp cayenne pepper because I didn't have hot sauce. We made tacos and topped it with pepper jack cheese, homemade guacomole, sour cream, tomatoes and lettuce. I think we will be eating this often! Thank you, Caroline!

Buttery Spritz Cookies

YUMM! At Christmas I had used the recipe on the box that my cookie press came in, and was sorely disappointed. This recipe is so much better - the texture and flavour are excellent. I followed the recipe exactly and had no problems with the dough being too stiff. Again, YUMMY!!

Chai Tea Mix

Reviewed: Dec. 7, 2005
I've loved Oregon Chai for years but I don't buy it very often since it's become so expensive. After reading all the reviews I cut the sugar back to 1-1/2 cups (I've never liked it very sweet) and added the vanilla extract to the sugar. I just finished my first cup and I think it's great. I will probably cut back the ginger to 1 tsp on my next batch as I found it a little strong. I had already planned on giving this as a Christmas gift to several family members. Now I need to go to the store and stock up while they still have the spices on sale! Thanks so much, Jo!
