Cranapana Bread

I wanted to make a bread that was not too sweet, to have with a cup of coffeee or tea...This is it! I used crushed pineapple instead of the apple, and cranraisins with pomegranate juice instead of the cranberries because it's what I had on hand. The flavor was fantastic, it had consistency and cooked in a cinvecton oven for 65 minutes at 325, I will definetly make it again!

Peruvian Style Beer Can Chicken

Having lived in Peru for many years, one of my favorite dishes was Pollo a la Brasa...finally I can make it here! I followed the recipe, but did not have beer for the paste and I think you can do with out. Since we just got our BBQ with the rotisserie attachment I used it and after 2 hours at about 350 F, it was perfectly done! A tip for those who donĀ“t want to keep smelling the spices after you rubbed it all over the chicken- use disposable gloves! I use them often in the kitchen, specially when handling chicken. I made white steamed rice with garlic peruvian style and it was gone. My boys loved it, even the picky one. The chicken was very moist and tasty. Next time I may use a little less salt in the paste, since I brined it overnight. I willll make this again for sure, probably 3 chickens at a tiime!

Fluffy Pancakes

This recipe is so simple and the best! You don't need to buy pancake mix (that expires before you know it!), all the ingredients are staples in most pantries. I made it for my boys and they loved them! I added 1/2 tsp of vainilla extract just for kicks.

Downeast Maine Pumpkin Bread

Nothing smells like Holidays like the mix of ginger, cloves, nutmeg and cinnamon in the kitchen! I tried this recioe and my family and friends loved it. Pair it with a cup of tea for an aftrnoon snack or a cup of joe for a morning start. I did not have enough loaf pans so I used a bundt pan + 1 loaf pan and the quantity of the mix was just right. I kept the bundt cake for us and gave the loaf as a present. Perfect! I also used half brown and half white sugar, great suggestion.

Best Chocolate Chip Cookies

My 7 year old and I made this recipe today, it's the season! He says: "These are the best cookies I've ever had!". We did not add nuts (boys will pick them out) and used chocolate swirl chips...next time I will use dark chocolate, I think the combination with the sweet and salty would be fantastic!
