Pork Tenderloin with Creamy Herb Sauce

Pretty good! I subbed Herbs de Provence for basil and parsley. I also used 1% milk and 1/4 cup of sour cream in place of light cream. I bought a smithfield boneless tenderloin and sliced it - sliced beautifully and cooked following directions and it was perfect.

Pico de Gallo Chicken Quesadillas

I thought this was great. Simple, easy but all the flavors together were delish. I omitted green peppers and jalapenos (3 picky kids)- I also used frozen grilled chicken strips. Easy, basic, but spot on!

Donut Muffins

Awesome. Reminds me of Dunkin D's. I used Smart Balance Whipped for the mixture and real butter to dip (I have no margarine!). Kids love them. The kids wanted sprinkles on theirs and soon discovered that the cinnamon sugar were the best and sprinkles were not. I saved this to my recipe box after the first bite!

Easy French Dip Sandwiches

pretty darn good for someone who grew up ordering this at every restaurant! I think it could use a tad more spice - but I can't pinpoint what it needs. I made it exactly as written and it was excellent. I had two - shhhhhh!

Rice with Summer Squash

For a side dish - simple and perfect. I used Comet Long Grain Rice. Perfect size for 2 adults and 2 small children. I would double for 4 adults. You could also substitute broccoli for the squash & zucchinni. I bet that would taste excellent. Buttery, creamy and the onions are the perfect combo with the rice. Great combo!

Baked Lemon Chicken with Mushroom Sauce

5 stars because it was simple, easy and delicious. Not overly seasoned - pure flavor. I only substituted dried parsley. My advice is to cook the sauce about 10 minutes before serving. It cooks fast and it will get a film on top, but it is a disolveable film which is nice.... I served it with chicken flavored rice and asparagus.

Easy Baked Tilapia

Eh - it was okay....served with brown rice. We were all hungry an hour later. LOL. Prepared exactly as suggested....I maybe would have squeezed lemon on everything and then laid slices on it.

Chocolate Brittle Surprise

So easy. So easy. So easy. So good! I used graham crackers as suggested, halved the recipe and also baked for 13 minutes which was slightly too long. Next time I will only cook it for 11 minutes. I can't stop eating them!

Ground Chicken Gumbo

I did not care for this recipe. I followed directions with two exceptions: 1) I cut the tomatoes down - I left a bit in the can (seemed too runny). 2) I omitted the hot sauce (I had to feed a 1 year old and 4 year old). Even my husband who eats anything left a mound on his plate. The ONLY thing that could have given this a "3" is if it had sausage in it. It was definitely missing many things, but sausage was a flavor that could have been added. I had to add a bit of sugar and a lot of cajun seasoning to eat this.

Crunchy Rice Casserole

A little bland - I did put fried onions on top. It tasted like it was missing "something". Maybe next time a little more ketchup or something of the like. I put leftovers into scrambled eggs the next day - that was DELISH!

Absolutely Fabulous Portobello Mushroom Tortellini

Pretty good! I made it for 6 servings - I used a 15oz. jar of alfredo. I served it with Organic Rustic bread and Irish butter. YUM. Definitely not good for the waistline, but fast and so tasty!

Lentil Chili II

good concept, but way too bland. I made it as is, then I added a packet of chili seasoning, tripled all the seasonings and the liquid was too bland. Won't make it again - we actually threw away the leftovers.

Hearty Hash Brown Dinner

Yummy. I'd use less cheese next time, maybe 8-10 ounces vs. 12 oz. I also cooked it for 8 hours on low (I was at work), and it was not a problem. Very hearty and my picky eater (one year old) had 3 helpings!
