Lots of prep work, but the taste is phenomenal.

Chicken Parmesan

Reviewed: Feb. 20, 2013
Made as directed. Added a few spoonfuls of marinara sauce before serving as I served with white rice and wanted it more saucy. This was very, very good. Raves from the whole household.

Spaghetti Squash Saute

Reviewed: Jan. 28, 2013
I followed the recipe, but baked longer (50 minutes total) since it was too firm when I checked at 40 minutes. I made two batches. One with the ingredients listed here, and one with jarred alfredo sauce and leftover chicken. This was not very good as listed. This was my first attempt at making spaghetti squash. I liked it with the heavier sauce much better.

White Cheese Chicken Lasagna

Reviewed: Jan. 8, 2013
Made as directed, but with half the spinach (as the 20 oz would have been too much and wouldn't have fit in the pan). Also added about 1 tbsp more basil. It was pretty bland. I'll be making this again, but first seasoning the chicken and cooking it in butter...mmmm.

Italian Sausage Soup

Reviewed: Oct. 26, 2012
Good stuff. Made as directed. It was a little spicy, but not too bad. Added some lemon juice to my bowl to cool the spice, but the rest of the family enjoyed the small kick.

Zucchini Cobbler

Reviewed: Oct. 8, 2012
Seeded zucchini. Used brown sugar, truvia, and sugar. And replaced 1 cup flour with old-fashioned oats. Baked crust 10 minutes before adding filling to keep from going soggy. Served warm with vanilla ice cream. I was "sampling" the zucchini mixture a lot before it made it to the oven. Very good if you like sugar!

Sausage Egg Casserole

Reviewed: Jan. 11, 2012
Used as a base recipe. Used 1 lb sage pork sausage. Fried a green bell pepper and one small white onion in with the sausage. Didn't include biscuit mix or green chile peppers. The cottage cheese in this is fantastic. Will make over and over again. Hoping leftovers are as delicious as fresh out of the oven.

Tons of flavor. And easy to put together.

Chicken and Gnocchi Soup

Reviewed: Nov. 15, 2011
Good base, but lacks flavor. Tastes good with salt and pepper added. Will season the chicken next time. I liked it more than my dad did. Gnocchi is not flavorful at all and the texture is a tad offputting. Will probably make again but omit gnocchi and add homemade noodles, and add seasonings.

Banana Bread IV

Reviewed: Nov. 7, 2011
I was not impressed with this one. Had too much of a shortening taste and not enough banana flavor. I did change it by using half and half white and brown sugar and added cinnamon. Won't be making again.

Tropical Tuna Melts

Reviewed: Jul. 18, 2011
I made some adjustments to this recipe. I used french bread. I put in sriracha sauce and mixed shredded colby jack cheese in with the tuna. Didn't use celery only because I didn't have any. One of the best mix of flavors I've had with tuna. Gave 4 stars because without the sriracha, it would have been too bland.
