Brian's Easy Stuffed Flounder

Everyone enjoyed it.Moist & flavorful. Easy to make. Changes I made: I used flounder fillets, 1/2 cup of butter & 1/2 cup of chicken broth (instead of 1 cup of butter) & added some red peppers for flavor and color. Went well w/ a side of fresh baked asparagus spears. Will make again.

Stuffed Shells

Best shells I have made. Substitued ricotta cheese for cottage cheese. Use Bertolli's organic olive oil, garlic, basil sauce. Very cheesy & flavorful.

Balsamic Baked Tilapia

Fabulous !! Stumbled upon this recipe and happy I did. Have made it a few times since. Left the cheese out, still great. I added baby portabella mushrooms last time.(very good). takes only a few minutes to put together and bake.

delicious. made them for Christmas. went over well. but they are time consuming to make. had to freeze the mix before dipping in chocolate. could only take 10-15 out of freezer at a time to dip.

Janet's Rich Banana Bread

Was amazing, moist & easy to make. used a bundt pan and baked it for 1 hr. reduced sugar to 3/4 cup, part brown sugar , part white sugar. Used 3/4 cup pecans, will add more next time.

Lemon Cranberry Muffins

Very tasty & moist. Made about 20 smaller (not mini) muffins. Used 1/4 cup batter in each muffin slot of pan. Followed the recipe but added 1 tsp. lemon zest & decreased sugar to 1 cup. Baked for 18 minutes on 400 degrees. Turned out perfect. If no toothpicks to test doneness, use a piece of uncooked spegetti.

Cream Cheese Frosting II

Frosting was fine, very cream cheesy. It piped onto cupcakes nicely for decorating. But was awful with chocolate cupcakes.
