All Day Macaroni and Cheese

Reviewed: Oct. 10, 2005
Found this recipe while I was searching for easy crock-pot recipes. This recipe was so easy to prepare. When I served it, it looked terrible and tasted worse. Very bland. Mushy macaroni with nothing similar to cheese sauce.

Spinach Pancakes

Reviewed: Feb. 8, 2006
I agree that this is a good "base" for spinach pancakes. I made some changes to this recipe, first I increased the eggs to 6 and increased the flour to 3/4 cup because when I mixed according to these directions, it seemed way too much spinach for the amount of eggs. I would definitely add cheddar the next time and maybe a few tablespoons of diced tomatoes. This was good fix for a fried craving, but I think it may have a better texture if it were baked. I was hoping that the thought and appearance of pancakes would persuade my picky 5 year old to try it, but I ended up mixing up a batch of real pancakes anyhow. I'll make this again, just with my changes.

Baked Oatmeal II

Reviewed: Feb. 9, 2006
If I could give this a 10 I would!!!! Excellent, superb, irresistable! I used chopped apples and raisins instead of cranberries just because I didn't have cranberries at home. Except for that, I didn't change a thing. I live in Pennsylvania Amish country (2 miles from Smicksburg) and was a little doubtful when I read the description, but my my, this is definitely a Pennsylvania Amish taste. I read a review that compared it to tasting like oatmeal cookies and milk, I agree! I think I'll add this one to my Christmas breakfast menu!!! Thank you for the wonderful post!

Taco Bake I

Reviewed: Feb. 9, 2006
Very good! I used cheddar instead of montery jack because I had it on hand. We used tortilla chips and wheat thins on the side. My two year old loved it too! Great recipe! Thank you for posting!

Wild Rice Casserole

Reviewed: Feb. 9, 2006
I cooked this recipe at 350 for an hour and it wasn't near done so I turned up the heat to 450 and still had to cook another hour. The veggies were overdone of course, but the rice was still not quite done and there was lots of liquid sitting on top. I let the entire casserole sit in the oven for another 40 minutes and the rice finally plumped up. The flavor was so/so. I doubt I'll make this again.

Broccoli Beef I

Reviewed: Feb. 9, 2006
Really good. I added a little red pepper flakes to heat up the flavor. My sauce didn't thicken quite enough so I added a little more flour. I probably should have waited because I think it was just my impatience as the sauce ended up being too thick. Great recipe! Thank you for the post! I will definitely make this again!

Easy Scalloped Potatoes

Reviewed: Feb. 9, 2006
This was a really good recipe, but did not seem like scalloped potatoes. My mother in law makes a cheesy potato recipe and this seemed more like a version of her recipe. I put cubed ham into mine. We really like it as a ham and cheesy potato casserole though. I will make this again for sure.

Flourless Peanut Butter Cookies

Reviewed: Feb. 11, 2006
These cookies taste very impressive for only having three ingredients. These aren't my normal peanut butter cookies, but these are the ones I make with my 5 year old son. It's easy for him to count and measure the ingredients and it's a quick mix and bake.

Pasghetti Pizza

Reviewed: Feb. 24, 2006
This is a definite keeper! I used up some extra pasta from my pantry (rotini and wagon wheels) instead of the vermecelli. My pickey 5 year old ate his entire plate which is always a phenomenom.

Stuffed Peppers

Reviewed: Mar. 2, 2006
Terrific recipe! I parboiled the green peppers which I cut in half. I used brown rice, 1/2 pound ground beef, 1/2 pound ground turkey, and mixed a 24 oz can of diced tomatoes into the meat mixture before stuffing. I also added a sprinkle of flaked red pepper. I had enough meat to overstuff 6 halves and make two mini meatloaves (my 5 year old and 2 year old would not touch cooked green pepper). Ultimate comfort food!

Hoppin' John

Reviewed: May 6, 2006
A little bland, but workable. I followed the recipe for the most part except I was using fully cooked cubed ham which I added at the very end. Before I served this I tasted it, it was just a lot of spice, but not much flavor. I had read the reviews in which someone added tomatoes. I used half a jar of spaghetti sauce instead. It flavored it enough with tomato and more spices but didn't overpower it with a real strong tomato sauce base.

Marchetti

Reviewed: May 18, 2006
Not bad, but not what I was looking for. I thought this would be more like Amish casserole, but it was far from it. Extremely cheesy and I would have liked more of a tomato taste. Would use diced tomatos instead of tomato soup.

Sour Cream-Rhubarb Squares

Reviewed: May 18, 2006
Really creative way to use rhubarb. Reminds me of a combination between apple crisp and coffee cake. Would be nice with a powdered sugar drizzle. Thanks for this post!

Sour Cream Noodle Bake

Reviewed: May 18, 2006
I really liked the zip to this recipe. My two small boys didn't care for it though. My husband thought is was ok but wasn't terribly impressed. I was looking for some way to use sour cream that wasn't beef strogonaff. This was very close to strogonaff, but very good!

Missy's Lasagna

Wonderful recipe!!! I normally don't use cottage cheese in lasagna but wanted to try something different. I ended up getting company when I made this and was asked for the recipe. Thanks for this post!

Taco Soup VII

Reviewed: May 18, 2006
This was good, but needed to be served with chips or actually put in taco shells. Without the chips seemed like something was missing. My husband and I make tacos often, and thought this was a good alternative to "beef up" plain old tacos.

Cheesy Pizza Dip

Reviewed: May 24, 2006
I made this today for my son's preschool graduation tonight night...it's about half gone already! I used pepperoni flavored pizza sauce and didn't add any additional spices, onion, or pepper because of the kids. I think it would be better with more sauce and lots of spices for the grown ups. I also had to cook this at least 15 minutes. Will definitely make this again!

Steak Tip Marinade

Reviewed: Jun. 1, 2006
#1 steak marinade!!! A definite keeper! I cut the recipe in half and followed some other reviewers advice and used 1/2 garlic powder and 1/2 black pepper. It's tangy, sweet, and a little spicy. Easy to kick up the heat by adding red pepper flakes or hot sauce. This is also good as a steak sauce. Thanks a bunch!!!

Banana Custard Scrunch

Reviewed: Jun. 12, 2006
Loved this recipe! I made this for my kid's for breakfast and they sat down (very quietly!) and ate almost their entire cup. I used vanilla yogurt and only 1 very large banana. I will probably add more oatmeal next time just for personal preference. I need bigger glasses to serve this to adults, I used custard cups and they just weren't big enough to hold many bananas for my husband and I, but made in smaller portions, were perfect for the kids. Thanks a lot for a yummy and very easy recipe!

Italian Beef in a Bucket

Reviewed: Jun. 14, 2006
Wonderful! My in-laws lived in Chicago for several years and brought back the love of Italian Beef. My mother-in-laws version is a staple in our family, I can't wait to share this recipe with her! Thanks so much!
