Crockpot Adventures--Invest in an Electric Frypan

Although our crockpot meals have been wonderful, we decided we need a change of pace.  Bob went out and bought an electric frypan.  PURE GENIUS!  Tonight we had hamburger patties, fried potatoes with onion and topped with creamed corn.  Such a nice change and the cafe smelled like a restaurant.  :)  My husband calls it a "Poor Man's Meal"  but I say you eat like a king for pennies on the dollar.  Here's the recipe:

Poor Man's Meal

1 lb hamburger
2 Tbs. vegetable oil
1 large potato
1 medium onion
1 can creamed corn
1 cup frozen corn
salt and pepper to taste

Chop onions and potatoes in 1 inch pieces
Fry your hamburger patties ahead of time salt and peppering them the way you like it.
Set aside
Clean out the skillet and heat two tablespoons vegetable oil until bubbly
Add potatoes and onion
Salt and pepper to taste.
Cover and let simmer stirring occaisionally until potatoes are browned and soft.
Heat creamed corn in the microwave with 1 cup of frozen corn for 4 to 5 minutes.
Arrange potatoes and hamburger patty on plate and cover with creamed corn.
