Well, I invested in the crockpot and have cooked a few things in it--chicken stew being my first attempt.  It smelled wonderful in the coffee shop and tasted so good after eating junk food all week.  This week my daughter is in town, so we've been cooking at home, wrapping it in a towel for insulation, and then making the trek to Cleburne daily so that the workers can have a good meal.  We're definitely feeling much better.

I start back to school the second week of August, so now I'm thinking--since I won't be going to the coffee shop during the week--that some days I'll cook at home and wrap up the leftovers for the coffee shop the next day.  Then, some days could be crock pot meals and some days could be a warmed up lasagna from the night before.  I'm thinking that will add more variety to my husband's pallet and also give me something to do while he's gone.  My daughter and I have also started a blog about cooking, so I could use the time to post on that while I cook too.

Anyway, so far, so good.  I'll update you further in the fall.  :)

It sounds like you have been busy, but you have been planning and giving a lot of thought to your meals. If it is the chicken stew that I recommended, wasn't it fabulous? Continued success....

If you have a chance to try it, the Cheddar Spirals from this site was a recent hit. I use whole wheat pasta, FF evaporated milk and add some cubed ham, dijon mustard and hot sauce.

Sounds wonderful. I will! @ Janet: You recommended the chicken pie, which I plan to try next week. The stew recipe is one I've made for my family for 25 years. A family favorite.
