Southwestern Egg Rolls

I made these vegetarian by omitting the chicken and adding extra red peppers, beans and yellow peppers. I used tortillas and fried as stated though the next time I will try baking them after brushing with olive oil. Cheesy and delicious. I made a cilantro dipping sauce to dip the rolls into.

Authentic Enchiladas Verdes

My rating is for the sauce--its amazing. My store doesn't always carry tomatillos, so when I buy them I freeze them in their husks (they freeze very well). I also cooked the chicken as directed, wonderful and moist. I gave the left over broth that it cooked in to my dogs--poured right over their dinner. They went wild over it :-)

Pasta Primavera with Italian Turkey Sausage

I loved this, even after being overly concerned that the tomatoes would get cooked down too much. The sauce was perfect and light. The only thing I would change next time is either use sweet italian chicken sausage or leave out the crushed red pepper. I found the heat a tad overpowering from the hot sausage and the red pepper together.

Creamy Artichoke Pasta

Three years later after putting this in my recipe box, I finally make this the other night and I am sorry I waited! I added some fresh mushrooms and used whole wheat rotini pasta and we didn't miss any of the extra fat and calories from traditional creamy pasta recipes.

Prize-Winning Meatloaf

I used spicy V8 juice, some garlic, worcestire and katsup on top and while I thought it was delicious it was on the bland side. This is a fantastic basic recipe, and I will just be sure to add more seasonings.

Lemon Horseradish New Potatoes

Holy cow, these were fantastic. I used horseradish sauce in place of the prepared horseradish because that is what I had on hand. I boiled the potatoes and topped with the sauce, these will be a new favorite and went perfectly with my prime rib roast!

Seafood Lasagna I

I think the shrimp tainted it for me. I would use either all crab or medium or large shrimp chopped instead of the smaller shrimp if I were to make it again.

Chicken Souiza Cornbread Bake

I was really excited about this recipe, but I was a little disappointed. The presentation wasn't that great and I didn't like the mushrooms in this dish. If I were to make it again I would use sliced black olives in place of the mushrooms.

Kona Chicken

We loved this chicken. As suggested I used drum sticks and I didn't have time to cook it in the crock pot. I put it in the oven, covered, at 500 degrees for 15 minutes. I then poured the sauce over the chicken and reduced the heat to 300 degrees for one hour.

I was really excited about this recipe and followed it exactly except I added 1/4 lb of prosciutto. However the garlic really overpowered the taste from the tomatoes and the basil. We love garlic, but it is very powerful raw. I would decrease the amount of garlic if I were to make it again.

Stuffed Cabbage Rolls

My husband and I love these. It is similar to the filling in stuffed peppers. My parents always made these with beef gravy instead of tomato soup and I intend to try it next time.

Chicken Fiesta Salad

I used pinto beans in place of the black beans and added a chopped jalapeno to the mixture. I topped off the salad with shredded colby and crushed blue corn chips. This salad is so good it is hard to believe it is low in fat! My husband's response, "This is quite possibly the best salad I have ever had."

Black Bean and Corn Salad II

I used halfed cherry tomatoes and I think it cut down on the "mush" others had mentioned. I used this as a burrito filling with some lettuce and shredded cheese and it was delicious.

Enchiladas Suizas

This was soooo delicious, though I made a few changes. To spice up the sauce I used one can of chiles and one can of jalapenos. After the sauce was done simmering I put it in the food processor to make the sauce more smooth. I also added the olives to the chicken/cheese mixture. It microwaves well the next day.
