Oaxacan Tacos

This dish is easy & delicious. We add fresh tomatoes. Don't skip the jalapenos, either. If you take out the seeds, fresh jalapenos are NOT hot - just tangy!

Sloppy Joes II

Easy, yummy comfort food. Not haute cuisine by any stretch, but who looks for that in sloppy joes? I serve this frequently when we have casual guests dropping in & there are never leftovers.

Italian Summer Squash Polenta Bake

Yummy recipe! I used Sun-dried tomato polenta on the advice of other reviewers, and otherwise kept the recipe the same. We thought it was very flavorful, especially set off by some good garlic bread. This was my first experience with polenta, and I'm sold now! (we used the refrigerated prepared polenta and it tasted fine to me)

Oven Kalua Pork

This recipe was very easy to make! I am always a bit leery of trying to cook an unfamiliar cut of meat, but this one is just about foolproof. Make sure that you really SEAL the meat in the foil - if the juices can leak/steam out, the meat will dry out. My family of four devoured a 4 1/2 lb roast in one meal and asked me to "make it again often!"

Dad's New Zealand Mince Stew

This is a really flavorful stew. It is very much like spicy sloppy joes or a sweet chili. My family enjoyed it, but we had to eat it with lots of bread or crackers to tame the pepper down! Next time, we'll use just 1 Tbsp of pepper, and keep everything else the same. Many of the recipes I find published are pretty shy about using spices, and I almost always need to add some more oomph -- it's kind of refreshing to find one where I need to back off some!

Arroz con Pollo (Chicken with Rice)

My family (including my 2 year old) really enjoyed this recipe. I left out the salt and the tomato sauce so it wouldn't be too tomato-y, and added some cayenne (1tsp). We thought it would be great served with sour cream and enchilada sauce. One note - the recipe definitely calls for raw rice, not cooked. For anyone who has had trouble with the rice turning out, you need to make sure the dish is tightly covered when you turn down the heat, and remember that the cooking time is pretty exact.
